We have so many bananas here in Trinidad! Often the heat in the kitchen during the day makes them ripen very fast. Personally, I like bananas at the "just ripened" stage. Once they get too many spots or browned skin, I put them in the fridge and make banana nut bread soon thereafter. I use an old recipe from my old, torn-up, well-used Fanny Farmer Cookbook.

Fanny Farmer is the best! It was the first cookbook I ever bought, and I still refer to it. Your banana bread looks perfect.

@JMissner: Thanks! I have to find a way to re-bind the old book, tho. It's residing in a ziploc bag to keep the pages together!
