Baklava

This is a great recipe. I have tried to make baklava before with no success (I am not a genius in the kitchen though I try to be ; ) ). I made this with no trouble at all. I use pistachios and they really add flavor. I also layer and butter 6-8 sheets of phyllo between nut layers. Doing this really defines each layer and with the green of the pistachios it makes it really pretty. The only other thing I do is add about 1/8 cup of honey to the sauce. It kind of gives it some extra stickiness which I actually like. This is a wonderful recipe and really fun to play around with. It is actually simple enough for my 12 year old to do. I love working with phyllo (not sure why!). A trick I use if I can't work fast and it will dry out is to put a damp towel over it. When I say damp though, I mean barely wet! I just spray it once or twice with a spray bottle. That keeps it from getting too moit and sticking. My family loves this treat and they have me make it for them every holiday.

English Saffron Bread

My kiuds loved it! I made with our Easter dinner and it was deefinitely enough for everyone. Probably the largest loaf of bread I have ever seen! I was a little too citrusy tasting for me, but I was the only one who felt that way. I followed the instructions to a T and it came out exactly the way it said. So, good recipe, good bread!

Baked Potato Skins

I followed this recipe exactly. All my guests, family and children raved about it. It is a whole lot better than what you get at a restaurant! I will definitely be making these at next years super bowl and any other get together. They are even good cold. The only thing I suggest is using thick sliced bacon. I believe that it holds more flavor.

Jalapeno Yummies

This was a huge hit at our super bowl party! The only thing I changed was that I baked them in the oven. I also used a thick cut bacon for better flavor. This were so easy to make and so good! I tripled the recipe and my guests were begging to take the leftovers with them!

Pecan Pie V

You can make this sugar free. I just replaced the white sugar with Splenda, and cut the brown sugar in half and replaced it with Splenda Brown Sugar. It turned out great. My Dad hasn't been able to eat pecan pie since he found out that he was diabetic, so he was so excited when I made this for Thanksgiving and he could actually eat it. It tasted just like a regular pecan pie, if not better. To improve the look of the pie, I just patterned pecan halves on top before baking, and it turned out beautiful.
