Banana Crumb Muffins

The muffins are really, really sweet--but heck, that's just what I was looking for! Mine also baked up nice and moist. I like cinnamon, so I used 1/2 tsp. for the crumb topping and I thought it was good. The topping does get a little soggy after two days, but they still taste good. Thanks.

Mango Cardamom Bread Pudding

Pretty tasty. Good texture and easy to make. I halved the recipe and baked the pudding in four 6 ounce ramekins. Not exceptionally sweet and the cardamom is a little overpowering for me--next time I'll cutting the amount of cardamom and adding cinnamon, and perhaps some raisins. Will probably be really good with whipped cream, custard sauce, or ice cream, too.

Shrimp and Crab Enchiladas

Delicious, and even better in leftovers! I used two cans of sauce--one under the tortillas and one over--and mixed the scallions with the shrimp. I also mixed in a (drained) can of RoTel, and sprinkled cheese lightly over the filling.

Clare's Whole Wheat Potato Bread

Easy for a novice bread baker and yummy flavor--especially good warm with just a light slathering of butter! It did turn out to be somewhat denser than I expected. I also liked that it kept well; I just wrapped it in plastic and it was good for a whole week.

Creamy Mango Sorbet

Very good flavor. I don't have an ice cream maker, so I followed the directions as stated. It took much longer--nearly the whole day--for the cream to solidify, and it was a bit icy, but it tasted good nonetheless.

Mama's Italian Wedding Soup

Just made this for dinner--delicious! I cut the soup recipe in half and froze the leftover meatballs. Also used the tiny seashells--perfect for soup. Will be making this again.

Coconut Ambrosia Salad

Yum. I skipped the marshmallows and cherries, but will try them next time--I bet they'd be good. This is not for the coconut-wary, though. I also used "lite" whipped topping, more pineapple (a whole 15.5 oz can), and sour cream instead of milk. I'm sure I'll have this again before the summer's over. It's keeping nicely in the fridge, too.

Annie's Fruit Salsa and Cinnamon Chips

Great low-fat snack for a crowd. Like many of the others, I took this to a class--everyone loved it. I used the frozen "berry mix" and it turned out fine, but fresh berries probably would have been even better. I think it tastes best fresh--it gets a little weepy if you let it sit for a while.

Brick-Oven Pizza (Brooklyn Style)

Love. love. LOVE the crust. I made two small pizzas. Baked on my pizza stone and they came out perfectly. Be careful not to take out of the refrigerator for too long before using--the dough is pretty soft and my first disintegrated as I transferred it to the stone. The layering of tomato sauce didn't quite work for me--instead of mixing with the cheese it just kind of sat on top. It was yummy anyway, though.

Salmon and Spinach Fettuccine

A bit salty with the capers and smoked salmon--but a winner otherwise. I think the salmon may be a bit overpowering (and I love smoked salmon) so I may try it without next time.

Chicken In Sour Cream

A great way to use up stuff in your kitchen. I used a package of drumsticks (6 of them). The sauce is great on mashed potatoes. Even better the next day.
