Cherry Cheese Pie I

This is so tasty, and it's a very versatile recipe...but I did make some minor changes. I used powdered sugar- it incorporates into the filling better. I also added 1 tsp of vanilla, 1/2 tsp of lemon extract and 1/2 tsp of orange extract to give the filling more flavor.

Cool Whipped Frosting

I have mixed feelings about this. First off, it's not a frosting AT ALL. Positives: the taste is definitely better than canned frosting, it's not too sweet, and the recipe is versatile. I think it would work fine for cupcakes and sheet cakes, but for layer cakes...I don't think so. While I was frosting them, my layers kept sliding. Then, when I served the cake, everyone's layers slid apart as soon as the forks hit the cake. I will try to work with the recipe, and add only half the liquid next time. UPDATE: I made this again for Easter using only 3/4 cup of milk, and it worked MUCH better.

Cake Mixes from Scratch and Variations

I had to make a LOT of changes so this recipe is only getting stars because 1) it's pretty simple/easy 2) the baking time and temperature are accurate. That said, I had to change many of the ingredients (added an extra 1/2 cup of milk, an extra cup of sugar, an extra egg, one extra tsp. extract, used cake flour, and used 1/2 cup oil instead of shortening). With these changes, the cake had a better texture and flavor. Also, I mixed the wet ingredients THEN mixed in the dry until everything just came together. If you over mix, the texture won't be right.

Mile-High Apple Pie

This is very good...I made a couple of changes though. I used 1/2 cup white and 1/2 cup brown sugar, and 6 granny smith apples (which was more than enough).

Churros

I made these into little balls instead of trying to pipe them, and they came out very cute looking. I used a deep fryer, so they came out perfectly. The only change I made to the recipe was adding 1/2 tsp of vanilla for a bit of flavor. Very tasty, and everyone liked them.

African Curry

Wow, good base recipe. This was delicious and I'll be making it regularly, but I made many changes for the sake of adding flavor and a bit of heat: I used much more curry, only a half can of coconut milk, a teaspoon brown sugar, no bay leaf, a can of diced tomatoes with the liquid, much more salt (coarse salt), pepper, cayenne, pepper flakes, and sliced boneless-skinless chicken thighs- the dark meat has more flavor and stays more tender (plus it's cheaper). I sauteed the onion about 5 minutes, added the chicken (which I seasoned), then the garlic after about 5 minutes. Once the chicken was cooked, I added the tomatoes and rest of the spices and brown sugar. Then, I let that simmer for 5 minutes, slowly added half a can of unsweetened coconut milk, let it come to a simmer, then served over brown rice. This was the first time I made curry, but I'm no cooking novice so I knew better than to follow the recipe verbatim- you can tell it would turn out bland that way.

Mardi Gras King Cake

This would have been 4-star, but I had to knock one off because of the temperature. I had my cake on for 20 minutes at 330 degrees- if I had put it on for 30 minutes at 375, I don't know what it would have come out like. Anyway, I used a cream cheese filling instead of the recommended one, but I kept everything else about the recipe the same. My cake turned out fabulously, better than any I've had from a bakery.

Coconut Cream Pie VI

I had to make changes to this in order for it to have a better flavor: I did NOT add any salt, used 2 cups coconut cream and 1 cup milk, used 1.5 teaspoons coconut extract and 1.5 teaspoons vanilla, added in 1 extra cup of coconut, and used 2 extra tablespoons of cornstarch. With these changes, my pie came out wonderfully flavored and creamy yet stable enough to slice.

Cream Cheese Frosting II

Very good frosting, and mine turned out stiff like in the recipe photo after only being whipped for a short amount of time with a hand mixer. I halved the recipe, but I still used one teaspoon of vanilla, and put in 2 and 1/3 cups sugar. This is a good basic recipe, and went well with my red velvet cupcakes.

Strawberry Crepes

Didn't use the filling so I'm not rating that part, but the crepes were close to perfect with a couple of changes: I used about 2 tbsp. sugar, and added 1/2 tsp. vanilla. They were great, it was my first time making crepes...I served with an orange sauce and strawberries. I'll definitely make these again.

Orange Sauce for Crepes

This was perfect after I made some changes: I used OJ rather than concentrate, 1/3 c sugar, 2 tbsp. butter, 1/4 c honey, and 1 tsp. cornstarch. This produced a sauce that wasn't too sweet, and was nice and velvety. Before these changes, it was much too sweet and a bit thin.

Easy Strawberry Lemonade

I pureed the fruit, and don't think I would have been able to taste the strawberry flavor otherwise. But it was great, even better than what you get in restaurants, not to mention much cheaper.

My Crab Cakes

Very good; I used 2 cans of crab, 2 eggs, and only 20 crackers total. I didn't bother coating the crab cakes in breadcrumbs, and fried them in a mix of olive oil and butter. They browned beautifully, and tasted great with just a squeeze of lemon juice. Next time I make them (and there will be a next time!), I'll serve them with a sauce too.

Meringue II

My first time making a meringue, and it turned out beautifully. I used it for Grandma's Lemon Meringue Pie (recipe on this site), and it's perfect. I made the pie this evening, and we're already starting to eat it...if there's any left, I'll check in the morning to see if there's any weeping. The meringue layer separated from my pie, but I think that's because the filling had cooled by the time I got the meringue made...apparently, it's best to put on the meringue when the filling is still hot. Doesn't take away from the presentation or flavor however, and that was my mistake, so this recipe still gets 5 stars!

Cranberry Walnut Bread

It's ok, not that moist or flavorful. The crust is nice though. I added ginger, rum, vanilla and orange extracts, used half brown sugar and half white, and a pinch of salt and it *still* wasn't all too flavorful.

Best Ever Chocolate Chip Cookies II

With improvements, this was a 5 star recipe, but written as it is, only about 3 stars. First off, the texture and appearance of these are great without any changes, but the flavor isn't quite there. To make them flavorful, I added a pinch of salt, half a teaspoon of vanilla, half a teaspoon of coconut extract, and a cup of coconut flakes. I also only used one cup of chocolate chips. If you don't want to have coconut flavor in your cookies, leave it out and add one teaspoon of vanilla.
