The light of my life ; )
About this Cook
Unemployed--Recently laid off from a company I worked for, for 20 years! Guess no ones safe in this economy today. The plus about it all is I have more time to work on cooking, I've always enjoyed cooking but was hard to enjoy after work every night. I enjoy because it helps to find different meals so we are not just repeating the same food every week. I have 2 grown boys and 2 grandchildren who are the light of my LIFE
My favorite things to cook
Steaks, burgers and hot dogs on the grill. Soups and Stews and casseroles
My favorite family cooking traditions
My family loves spaghetti w/sweet Italian sausage. Pork green chili over eggs, fried potatoes and tortillas. A nice slow cooked chuck roast w/mashed taters, homemade gravy, corn and some good bread and real butter...yummers
My cooking triumphs
Pork Green Chili!
My cooking tragedies
Nestle Tollhouse chocolate chip cookies! When my kids were in grade school I had to make a dessert for them to take to school the next day so we tried to make some cookies, not sure what I did wrong but when they baked in the oven they turned into one giant cookie! Needless to say we went to the store and purchased an already made dessert for school!

Ultimate Twice Baked Potatoes
I have been making these delicious twice baked taters for years! I do a few things different though, I bake my potatoes without the foil on 400 degrees for about an hour, this causes the skin to harden and makes it easier to scoop all of the potato out and makes a nice secure boat to put ingredients back in. I also don't use any milk and add some season salt as well. My family would eat these every night if I made them! They are the best.

Pennsylvania Dutch Pickled Beets and Eggs
Although I didn't use bay leaves, a lot less sugar and only a 1/2 teaspoon of ground cloves, this is almost identical to my late Mother's recipe! I usually double the recipe, my son and I just can't seem to get enough of these when I make them...delicious!
