Tex-Mex Turkey Soup

Looking for something a little different than typical Turkey Frame Soup with leftover Thanksgiving turkey. I had to half it for the three of us, but now wish I had not. Really good. Since we all love beans of all kinds, I used a full can of black beans and didn't have any cilantro, so I skipped that and used close to a 1/2 cup of sour cream (because we love it) and it turned out absolutely perfect. Ended up serving with homemade nachos. There is not a drop left! We will certainly do this again and again. Since we don't have turkey all that often, next time will likely be chicken. Just excellent!

Braised Flank Steak with Lemon and Garlic

The spousal unit (a.k.a., Lefty) came home with 2 1/2 pounds of flap meat the other day and I had no clue what to do with it. But this was great. I only had beef broth in the house and it worked just fine. I thickened the sauce a little for texture and served with rice and corn. Darn good.

Southern Pimento Cheese

When I was a boy, my mother was the only person in our area code that made Pimento Cheese. All of the other kids would laugh because I ate such strange cheese sandwiches. This truly takes me back more than 50 years. I don't think Mom every thought to include "hollerpenoes," but I might try it next time. Everyone in the house turned up their noses when I mentioned this Southern Delicacy, but loved it when I made it. The Best Sandwich in the Universe is a Grilled Pimento Cheese or two...

Italian Sausage Soup

At the first hint of Fall, I start thinking about a big pot of soup simmering away. Last week I stumbled on this and the gang was wildly pleased. I did add about 1/2 pound of orzo (way too much) to give the soup a little more body, some Italian seasoning with a teaspoon or so of Rosemary. They are asking for it again soon! Great recipe.

Rice Pudding

Not quite as good as my Mom's, but not bad either. Added a little cinnamon and raisins - then baked close to an hour. And a little less milk than called for in the recipe. Darned good. Sue, tell your Mom "good job."

Roasted Asparagus with Balsamic Vinegar

I love asparagus and, so, this was a real treat. Generally, in this house, asparagus gets steamed to death and since it is one of my favorite veggies I was looking for something to break the cycle. I did give it a little dusting of parmesan as it came out of the oven. Just plain great!

Ground Chicken Taco Burgers

Very nice - the girlfriend brought home a pound of ground chicken, so I was thinking "What am I going to do with this?" This recipe fit the bill! As some of the other reviewers noted, as written, the burgers are very wet, so count on adding in 1/2 cup of bread crumbs. We will be doing this again throughout the summer.

Slow-Cooked Country Ribs in Gravy

Very nice! I had 2 pounds of boneless beef ribs and put the liquid together as listed. Since I was working with beef, I browned it briefly in a little oil then added the liquid and covered in the Dutch oven on the stove top - simmered for a little more than an hour and they were fantastic! Very tender. Nice flavor. Next time I will substitute brown sugar for the white and maybe double the sauce. For now, I have to go lick the pot!

Rice Salad

Hey Tracey -- this was excellent! I made a couple of minor changes to use up stuff on hand. Used some leftover grilled salmon in place of the tuna and couldn't find the pimento that I know is here someplace... so I used green stuffed olives. Served as a main course on leaves of Romaine like a lettuce wrap and it was fantastic! Thank you, Tracey

Chicken Piccata with Angel Hair Pasta

First had veal piccata years and years ago and loved it. For some reason, I was thinking about that meal earlier this week. I did this tonight and it was a big hit with me and the family. Since I love garlic, I used two cloves and, as suggested by others, doubled the sauce to toss with the pasta. This will certainly be a standard in my kitchen. Thanks, Reeni!

Marinated Baked Pork Chops

I followed this to the letter with a minor exception... Allowed three center cut loin chops to marinate for an hour or two, then grilled them on the barbarque. Simply put, they were great. Next time I will triple the recipe, brush the chops while on the grill and serve the marinate as a side sauce. Thanks for the recipe.
