About this Cook
I'm your basic simple cook. I like the quick and easy things or the slow cooker meals. I don't like foods that come in a box, but my husband does, so I compromise. With a 2 year old and a baby girl bun in the oven, my cooking skills have changed quite a bit!
My favorite things to cook
I love to cook anything Mexican or Italian. Those are my two favorite types of food. I will try anything that perks my interest though, so I have a wide variety of favorite things.
My favorite family cooking traditions
My grandmother makes the worlds best cheese grits. She's been making them since she was little and it was a recipe handed down through many generations. Now I have it and I would eat it everyday if it wasn't so fattening...haha! My maternal grandmother always made me Mickey Mouse pancakes when I was little. I now make them for my daughter....sometimes in pink.
My cooking triumphs
Everyone loves my lasagna, enchilada's, fettucini alfredo, as well as my garlic parmesan breaded chicken breasts. I also make a rice dish that will blow-ya-mind! :)
My cooking tragedies
I completely ruined a beer broiled whole chicken once. It was the most disgusting thing I've ever put in my mouth. I tried to make my own fried rice as well....and the first time was a flop. I have since mastered the fried rice though, but not the chicken. I have also learned that some of the recipes from Pinterest are....um....not so great. haha!

Baked Honey Mustard Chicken
This isn't bad by any means, it's just not our favorite. We tried it for the first time tonight and thought it was to "herby". I usually like honey mustard flavored things and if I try baking this again, I will cut down on the amount of basil and parsley that I used today. =) Like I said, it's not bad, MY family just didn't care for it.

Boneless Buffalo Wings
I would give these ten stars if I could, they are DELICIOUS! I fried mine in a deep frying pan, not a deep fryer, and they turned out great! I also didn't alter the recipe any and do agree with a couple other reviews.....use more flour! I ran out of the mixture with about 4 strips left. That's the only thing I'd change. The taste is great and I've also tried it with Honey BBQ sauce---fantastic. I think I may try to bake them next time because I will definitely be making these again. My husband has asked for them three times now....haha!

Chicken Enchilada Soup II
Excellent! I also did some tweaking to the recipe, just like everyone else. I didn't have masa harina, so I googled what I could use as a substitute. I ended up putting corn tortillas in my processor and mixed a cup of that mixture with the 2 cups of water. It worked perfectly. I also used half a pound of Velveeta instead of a pound, put a cup of frozen corn in (I love corn), then topped the soup with real cheese. I used mozzarella. I tasted it halfway through the cooking process and thought it was a little bland. So I added half a package of taco seasoning and it rocked my socks off!! I served it with corn chips, cheese and sour cream as toppers. It was very very yummy.
