Nutty Quick Bread

I really wanted to make bread but didn't have all the ingredients. I used organic chocolate milk instead of buttermilk cause it was the only dairy I had, I used steel cut oats instead of grape nuts and whole wheat flour, and surprisingly it was awesome!

Pumpkin Casserole

I used regular milk, cut the sugar and butter in half and used whole wheat flour and it was soooo good! I could have eaten the whole dish myself! Nice change from pumpkin pie.

Tastira (Tunisian Fried Peppers and Eggs)

I wanted a recipe that would help me to use up all the peppers and tomatoes that I had and this was perfect. It was really really good! I liked it so much that I am going to make it again tomorrow! And I will keep making it in the future! Thanks! :)

The only changes I made was to increase the pepper to 1/2 tsp and I used buttermilk cause I didn't have any cream. So good!

Turkey and Quinoa Meatloaf

I am blown away by how good this was! I didn't think a turkey meatloaf could possibly be very good, but I was completely wrong. I was worried it might be too spicy with the pepper sauce but it wasn't at all. I used ground chicken because it's what I had. I used 2 small green bell peppers instead of onion, cause I didn't have any. And I used sundried tomato pesto instead of tomato paste, because I didn't want to open a can of paste for only 1 tbsp.

Addictive Pumpkin Muffins

I left out the raisins because I don't like them in breads. I used a mixture of whole wheat flour and oats. Reduced the sugar by 1 cup. And used all pumpkin instead of applesauce. It came out really delicious and no one could tell it was really healthy!

Mom's Zucchini Bread

Very good bread. I cut sugar down to 2 cups. I used raw sugar and whole wheat flour. I also replaced the oil with buttermilk, cause it needed using up. Came out very moist delicious! Bake 1 hour and left in the oven over night.

Pumpkin Zucchini Bread

Excellent bread! :) I used raw sugar and cut out 1/2 a cup of it and it is still plenty sweet. I used two cups of zucchini. And instead of butter I used a cup of milk, not for fat concerns, but because I had milk that needed using up. I baked it for an hour then turned the oven off and left the bread in the oven over night. Came out really moist and great tasting.

Spiced Applesauce Bread

Delicious bread. I could eat it all myself in one sitting! I reduced the oil to 1/4 cup and used chia gel for the other 1/4 cup. I used raw sugar and reduced it 3/4 cups and used whole grain flour. I also added one diced apple and doubled the spiced.

Dark Rye Bread

Very good bread. I used whole wheat flour instead of white and I increased the caraway seed to 1 tsp. I don't have a bread machine, so I kneaded it in my Kitchen Aid mixer. I ended up having to add an extra 1/4 cup of flour, as the dough was a little too wet. I will try cutting the water to one cup next time. I let it rise for one hour then punched down and put in a 9X5 loaf pan. I let it rise another 45 minutes and then baked at 375 for 45 minutes. Next time I would use an 8X4 loaf pan for a taller loaf. I will certainly make it again!

Sweet Potato Corn Bread

Wow this bread was truly amazing. I used whole wheat pastry flour and whole grain corn meal. And a little less oil and a little more sweet potato. It came out super moist. My whole family, including my picky boyfriend loved it. You can't even tell there is sweet potato in it. It does not come out like a traditional corn bread, by more like a hearty bread that could be used for sandwiches.

Zucchini Brownies

They are excellent. A little more cake like than brownie like. They are so good they don't even need the frosting. When I make them I use olive oil, raw sugar and whole grain flours. Very moist and delicious.

Rosemary Roasted Turkey

The rosemary mixture flavors the turkey perfectly and makes an excellent gravy. Turkey comes out very moist. This was my first attempt at making a turkey and it was wonderful.

Ranch Dressing II

This makes the best ranch dressing I have ever made. I always use plain yogurt in the place of the mayonnaise and sour cream. Excellent flavor. I don't like store bought ranch, but I love this one.

Perfect Pumpkin Pie

Very easy, truly perfect pumpkin pie. I buy organic sweetened condensed milk to avoid all of the preservatives and nasty ingredients of regular condensed milk. I also make my own crust out of oats and the seeds from the pumpkin I bake. This is a fool proof recipe.

Quinoa and Black Beans
