Concord Grape Pie III
Last summer I was lamenting that one could not buy Concord Grapes it seemed, my favorite from my childhood. Literally the next day on Craigslist a man was offering a couple of boxes from his garden, he just couldn't use them. I had never made Concord Grape Pie before, but CG's + pie = how could it go wrong? I ended up making four using this recipe, and sharing them. SOOOO GOOOD. A little time consuming to remove skins and seeds, but if you are a Concord fan, it is worth it. The only change I made was I use Tapioca in my pies instead of flour...Try this!

Big Soft Ginger Cookies
Awesome!My only complaint is that I didnt double the batch! I used butter but otherwise followed the recipe exactly. I cant understand why so many people have had problems with this recipe. My dough was never overly sticky, more like a smooth, firm play do. I did chill for about 30 minutes before baking. I made slightly smaller size balls and then flattened them just a little. In thinking of what could have gone wrong for others my only tips are to never over-soften your butter/margarine. I only soften it enough to be able to cream it until fluffy with the sugar, then I add molasses and "fluff it up" some more. Then I add the egg. I combine all the dry ingredients in a seperate bowl first then add them to the butter mixture. Also, I never use a warm cookie pan. I rotate them so a totally cooled one is ready to take the next batch or the cookies start to spread to early. One last thing, mine did crack nicely...maybe because I didnt roll them too perfectly into a ball, if that makes sense? Not too smooth, the balls already had cracks in them. Hope this helps someone else!

1-Dish Taco Bake
We liked this as a quick night dinner. My husband didnt like it without sour cream on top, but with it he ate it just fine. I did double all ingredients EXCEPT the yeast and the crust/bread turned out great. Baked it about 40 minutes in a 9x13 pan.
