Uptown Cowboy Caviar

I had it at my daughter's Craft Party, then decided to try it for myself. It was a definite hit! I added 1 and a half, huge Avocados which made it even better, almost creamy. Since my hubby's stomach is sensitive to strong chili, I added a small can of diced green chili, perfect. It was truly enjoyed. When I make it again, I plan to experiment again. This time I will add thawed from frozen whole kernel sweet corn, because the corn that was recommended just didn't have enough color. I will include red onions for additional color and flavor, as well as, kidney beans for more bulk. I think this CbC is good enough to add to just about any dish. I may try it with fish, fish tacos or on the side. No matter which way you serve it, it is so very tasty. The grandchildren were happy with a spoon and a little bowl each, as did my older brother (who swears he doesn't eat vegetables)!

Sweet Corn Cake

I tried this version, and it was delicious! I didn't use the Mexican Harina, I used regular All-purupose Flour. It still came out delicious - can't wait to do it again, or try another version. I just love allrecipes.com, I'd recommend it to all levels of cooks.

Pecan/Sour Cream Streusel Coffee Cake

I have made this cake a few times and it gets better & better. I no longer use the icing, it is wonderful without. I will be making individual cupcakes this time around, it keeps things neat and easy. I do not have to portion for my guests. Awesome recipe! I did cut back on the baking soda, used half as much. Still came our amazing!

Streusel Coffee Cake

Country Green Beans

We grew pole beans this summer and I froze many of them, but when I found this recipe I tried it with the addition of ham chunks! This is something that keeps your mouth watering and wanting more. Exceptional Taste!

Persimmon Cookies II

My family and friends love these. Now even my hubby bakes them when I am out of town. I don't usually add raisens, but crasins are awesome with this recipe. I also use my own homemade brown sugar for a darker/richer cookie.
