I did make a few adjustments. I used ketchup instead of tomato paste because I didn't have any, I omitted the mushrooms, used 1/2tsp dried rosemary, 1 tsp dried thyme, and used a 2.5lb roast (kept the rest of the ingredients the same).
ALSO, I added potatoes at the end like a review said and my potatoes weren't done. I would suggest putting them in half way through or even at the beginning on the side of the roast submerged in the juices. I used red skinned potatoes and cut them into about 1-2 inch cubes. Really good flavor!
