Grammy & Orion
About this Cook
I love being Grammy to Orion, our grandson. He is two years old. He lives in Tehachapi with his mom so my husband and I try to see him at least twice a month and keep him for a few days each month either at our home or at his daddy's in Big Bear. I also enjoy time with my Mom-in-law, my God-daughters, and my sisters.
My favorite things to cook
I love baking but i also enjoy trying new recipes for dinners and desserts.
My favorite family cooking traditions
I enjoy making the entire Thanksgiving dinner. I also like making tamales at Christmas with my husband's family. I am half Italian, but my mother did not enjoy cooking so our traditions slipped away.
My cooking triumphs
Roast Turkey. Food gifts at Christmas time.
My cooking tragedies
I made a chicken enchilada dish with shredded chicken breast, non-fat cheese, non-fat sour cream, etc. It was awful! We couldn't even eat it!!! I also tried a spaghetti dish where you put the pasta in the sauce to cook. It was like eating glue! We had to throw it away. LOL!!

Crispy Fried Chicken
I removed the skin and fried it first, my hubby called it chicken bacon! Then I made boneless thighs as directed in two batches. AWESOME!!!

Easy Garlic Broiled Chicken
I am at High Altitude here in Big Bear CA so i baked bone-in thighs at 375 for 45 minutes as other reviewers said. I then removed the chicken to a broiler pan and broiled, turning pieces over after 6 minutes to crisp both sides of the skin. I drained off the juices into a saucepan and added 1/2 cup flour, 1/2 cup chicken broth and 1/2 cup white wine. My sauce "broke" when i cooked it so I used my Bullet Blender to smooth it which worked perfectly! I served it all with brown rice. My family loved it! I have leftover sauce to serve with pork another day. Yum!!!

Slow-Cooker Chicken Tortilla Soup
Wonderful!! I doubled the recipe and before it was done I added MASA DUMPLINGS and let it finish cooking. My Mexican Heritage family loved it! My husband said it was the best he ever had.
