About this Cook
I am a vegan stay-at-home mom. I am in the kitchen a lot, because I make most everything from scratch. We stopped buying cereals, any bread products, fake cheeses, etc. We've only been vegan for about a year, so it's really been a challenge learning how to cook all over again, but I'm really enjoying it. One of my favorite things to do is looking at non-vegan recipes and making them vegan, and changing dessert recipes to make them more nutritious.
My favorite things to cook
Vegetarian taco salad (Haystacks!), salads, panzanella, tofu tacos, smoothies, apple crisp, spaghetti sauce (saves me so much money, too!), vegan alfredo sauce, bagels, bread, desserts.
My favorite family cooking traditions
Cooking with my children. They love being in the kitchen with me, and even though it takes a lot longer to get things done when they're helping, it really makes my time in the kitchen more fun.
My cooking triumphs
Every time I make something and one of my children says "that's good, mom."
My cooking tragedies
I mistook a canister of powdered sugar for flour when I was making cookies one time, and didn't realize it until they turned out horribly and I went to make a new batch.

Quick Enchilada Sauce
This is called "quick enchilada sauce" for a reason. It's very quick, and though one reviewer didn't like it because it tastes canned, but it sure is quick, compared to making the sauce from dried chiles, and unlike canned, you know what's in it because it's made at home. I have made this 3 times now. My husband loves it, my children love it, and I love that it's quick and easy. Thank you, Tammy S, for sharing your recipe!

Chocolate Chip Butter Cookies
Yummm!!! Didn't change a thing and even my husband, who doesn't do a lo of sweets, loved them.

Chocolate Applesauce Cake
I made this cake and it was gone in less than 12 hours... almost eaten entirely by me! I will absolutely make this cake again. I'd make it tonight if I weren't out of eggs. The only improvisions I made were that I used 1/2 cup less sugar than called for and I substituted whole wheat flour for the entire amount of flour. It turned out fantastic
