Jamie's Cranberry Spinach Salad

This will be making its second thanksgiving appearance in a row at our multi-family dinner. Fantastic. Absolutely declicious. I left out the poppy seeds, because I didn't have any last year, but maybe I'll try them this year. ALthough it was so good anyway, maybe I'll just stick with it as is....

Ricotta Gnocchi

Amazing, simple, quick and FULL of calcium! I subbed 1/2 whole wheat flour, and didn't make the sauce. Instead, I sauteed them lightly (after boiling) in olive oil with baby spinach, sliced garlic, chopped basil and freshly grated parmesan. Perfect, delicious, less fat, and my toddler even ate the spinach!!!

Curry Pumpkin Soup

Fits my two dinner rules: very quick and easy and my family loved it - and my toddler ate it like it was dessert. To quote: "yummy, yummy pumpkin soup". Made it with fresh pumpkin (we have tons of it at home). Will be making this again as part of my Thanksgiving meal.

Red Pepper Cream Sauce

A bit bland, but a good substitute for tomato-based pasta sauces. Made over gnocci, added chopped fresh basil on top, which made a BIG difference flavor-wise.

Pumpkin Coconut Curry

I have a glut of pumpkins, and so I think I'm trying every pumpkin not-dessert recipe on this site. This was ok, but far from the best. The presentation isn't beautiful, the flavors are ok, but not complex. The best part about it was definately the sauce, which I could eat by itself over rice. Decent, quick, healthyish (other than the coconut milk), but not a show-stopper.

Whole Wheat Apple Muffins

Ok - the four stars comes after some really big tweaks. Actually, I would consider the result maybe a differant recipe entirely: I did 1 c white flour and 1 c whole wheat, because I just started this week switching my family to whole wheat everything. I used 1 1/4 cup chopped apples, and found that there weren't enough. Next time, I'll do 1 1/2 cups. I quadrupled (maybe tripled) the amount of cinnamon, and also added nutmeg. Added, as reccomended by many, vanilla. Worried about moistness/heaviness, I used 2 eggs (but eggs here in Israel tend to be smaller than US eggs) and a bit more oil (canola) as well. Like I said, maybe an entirely differant recipe but....MY FAMILY LOVED IT!!!! My 18-month old ate two! In one sitting! (which I justified by adding a bit of cream cheese filling...protein? calcium?)

Homemade Mac and Cheese

I'll reiterate what others have said: this is a very good base recipe, but really needs something else. I followed the recipe exactly, other than substituting whole wheat zoo-shaped pasta for macaroni. I also thought salt was lacking, so I added about 1/2-1 tsp. BUT it needs more. I'll make it again, but try adding more salt, maybe some ground mustard, and doing half-cheddar, half smoked gouda because this is really, really BLAND. The texture was okay, a bit clumpy/cottage cheesey in the end, but I think that's what happens when you don't use velveeta. On the bright side, it has 94% of your daily calcium... (great for preggies and toddlers who aren't worried about gaining weight!)
