About this Cook
I am on a quest to reduce my (small) family's food budget drastically while maintaining my sanity as a hard-working, grad-school attending, mom. And while making sure that my toddler doesn't live exclusively on string cheese and microwaved baked sweet potatos, just cause they're quick.
My favorite things to cook
I'm exploring whole wheat. But as an American ex-pat, I enjoy recreating American-style home cooking in a kosher kitchen with products available in Israel (um, that means no beef bacon, pillsbury crescent-rolls-in-a-can, or processed cheese products, among other things). Also, I live in an apartment that is part of an 80-year-old farmer's house. Each week, he brings me seasonal things in a bag, and my weekly challenge is figuring out what to do with them! (This week= swiss chard, oranges, fresh parsley and baby celery)
My favorite family cooking traditions
Well, I am a 4th generation American (Virginian) of Eastern European Jewish origin. So both southern and Jewish are soul food sources for me. And my husband is Kurdish (from Iran, not Iraq) Jewish, which adds a whole differant menu.
My cooking triumphs
Feeding my family on a weekly basis. Every day is a little victory.
My cooking tragedies
Last week's banana-leather muffins. Although the toddler loved them (maybe he was teething?).

Ricotta Gnocchi
Amazing, simple, quick and FULL of calcium! I subbed 1/2 whole wheat flour, and didn't make the sauce. Instead, I sauteed them lightly (after boiling) in olive oil with baby spinach, sliced garlic, chopped basil and freshly grated parmesan. Perfect, delicious, less fat, and my toddler even ate the spinach!!!

Homemade Mac and Cheese
I'll reiterate what others have said: this is a very good base recipe, but really needs something else. I followed the recipe exactly, other than substituting whole wheat zoo-shaped pasta for macaroni. I also thought salt was lacking, so I added about 1/2-1 tsp. BUT it needs more. I'll make it again, but try adding more salt, maybe some ground mustard, and doing half-cheddar, half smoked gouda because this is really, really BLAND. The texture was okay, a bit clumpy/cottage cheesey in the end, but I think that's what happens when you don't use velveeta. On the bright side, it has 94% of your daily calcium... (great for preggies and toddlers who aren't worried about gaining weight!)

Jamie's Cranberry Spinach Salad
This will be making its second thanksgiving appearance in a row at our multi-family dinner. Fantastic. Absolutely declicious. I left out the poppy seeds, because I didn't have any last year, but maybe I'll try them this year. ALthough it was so good anyway, maybe I'll just stick with it as is....
