Mocha Chocolate Chip Banana Muffins

Thank you Shelley! This is the most delicious muffin recipe I've made but with a few changes; 1&1/4 c unsweetened applesauce, 1/4 c milk, 1tsp cinnamon, 1/2 c brown&white sugar(1cup total), 1/4 c mini choco chips, and 3tbps coffee in 2tbps hot water. The coffee really enhances the chocolate with a slight hint of banana.

MMMMM... Brownies

These were AMAZING! At the request of my dear friend, I made her these brownies for Xmas. It was such a great hit among my friends that I made four batches in two days. Everyone said that they were THE BEST brownies in the world. edit: added 3oz chocolate chips, 1/2 tsp instant coffee dissolved in 1 tsp hot water(enhances the chocolate taste), 1/4 c milk(to make the batter thinner), and used 3/4 c sugar because the extra chocolate chips add sweetness.

delish! i substituted the cream of tartar with a 1:1 ratio of lemon juice. distilled white vinegar can also be used in place of cream of tartar

Lighter Banana Muffins

These were the best banana muffins I've ever had/made! Since many reviewers had said that they were a little dry, i added 1/2 c unsweetened applesauce, 1/4 c milk, and an extra banana. Also, I added a tsp cinnamon and a pinch of nutmeg for some extra flavor.

Homemade Fresh Pumpkin Pie

Mm.. So yummy~! This is THE BEST pumpkin pie I've ever had! I wish I could rate more than five stars. As many reviewers had suggested, I doubled the amount of spices and added ground cloves for an extra "punch". This is not enough for two whole pies so I added 1/4-1/2 c more of pumpkin.

Baked Onion Rings

I couldn't get the breading to stick but I think I'm at fault - probably didn't beat the egg whites long enough. However, they did taste pretty good, considering it's a healthier version of the greasy, fried rings. Following the advice of my father, I coated the onions with cornstarch, then dipped it in egg white, and finally in the bread crumbs. Thankfully, the breading did stick to the onions.

Thick Chocolate Pudding

Delicious! I made this last night, at the request of my mother. As she and other reviewers have said, it wasn't sweet enough. However, I thought it was perfect! This is perfect for those who prefer a light chocolate flavor, not an overbearing strong taste.

Glorious Sponge Cake

I made this last night and it was a hit! My family dug in like no tomorrow. I changed tweaked the recipe a bit. Instead of lemon rind and water, I added two-three extra tbps of lemon juice. It had a faint lemony taste. Overall, simple and delcious!

Brown Sugar Chocolate Crackle Cookies

Mmm.. These were heavenly. I made these last night and my sister and I gobbled them up. Following a reviewer's advice, I reduced the oil to 1/3c. Surprisingly, the cookies do spread alot so they tasted like crispy thin cookies. Nevertheless, delish!

Theses weren't the best cookies I've ever had but they satisfied a cookie craving. I reduced the oil to 3/4c and added a little milk to make the batter smooth.

Orange Muffins

Hasty Chocolate Pudding

I ran out of milk so I substituted with coconut milk and boy was it good! A trick for making smooth and creamy pudding without a strainer is to mix the sugar, salt, cornstarch, and cocoa together first and then slowly adding milk until you get a smooth paste. Then, continue to gradually add milk. Whisk constantly on the stove, focusing especially the sides and you're good to go. I added a pinch of instant coffee to bring out more of the chocolate flavor.
