Potato Leek Soup III

This was amazing!!! I used whole milk instead of heavy cream, 1/2 cup butter and added 1/2 tsp red pepper for some extra heat. I blended half the soup at the end then mixed it with the chunky soup.

French Herb Bread

Wonderful soft bread with excellent flavor, reduced salt in filling by 1/2. I even made it plain with wonderful results. Didn't have any distilled white vinegar so I used plain rice vinegar instead. Turned out great.

Raspberry Lemon Muffins

These were amazing muffins. I've made them 3 times already. Reminded me of raspberry lemonade. I followed the recipe exactly except for two things; I used 1/2 cup sugar instead of 3/4 cup and used soy yogurt since I'm allergic to dairy. They were fantastic.

Pesto Tuna Salad with Sun-Dried Tomatoes

Great idea! I didn't have any fresh basil or pesto so I used 1 Tbs dry basil, 1 clove garlic, some grated parm and a little olive oil and made my own. Not as good as real pesto with fresh basil and pine nuts but definitely did the trick.

Tiny Chicken Turnovers

These are great! My hubby even loved them which surprised me since he hates pot pie. Only thing I changed was I used toffuti cream cheese since I cant eat dairy. Couldn't tell the difference.

Mustard Pomegranate Pork Tenderloin

I used chicken instead of pork and pan fried it but followed everything else the same. The flavor was amazing. The only thing I would do different next time is to double the sauce to pour over mashed potatoes.

Dark Chocolate Cake I

A wonderful cake. Made it for a friends birthday and she loved it. I filled two 8" cake pans and used the left over batter for muffins. When the cakes had cooled, I stacked them with a raspberry filling of 8 oz fresh raspberries and 6 Tbs raspberry preserves. I also made a double recipe for Buttercream Icing (By Sharon Gerstman) with vanilla bourbon since I ran out of vanilla extract. The cake looked so professional and it tasted amazing.

Beef Bulgogi

Tasted just like the restaurant. I just wish I had a hot plate to keep the meat warm longer. Slicing the meat wasn't the easiest thing to do. Took some advice and froze it before slicing but its still quite difficult, even with a good knife. Worth the effort though. Served it with Korean cucumber salad and rice.

Hot and Sour Chinese Eggplant

I have been trying to find this recipe for a long time with may failed attempts. I love the eggplant cooked at chinese restaurants but I could never get it right until I found this. I made a few additions to make it perfect but its also good as is. I added 2 cloves garlic, added an extra green chili, chopped up about a Tbs of fresh ginger and doubled the sauce. I think next time I will triple the sauce (I just really like it) and add some ground meat for extra flavor. Thank you for posting it. My search for this eggplant recipe is now over.

Artichoke Stuffed Mushrooms

These were so good. I sliced a bit off the mushroom caps so they would sit flat and added them to the stuffing. The mushrooms were overflowing and I had so much stuffing left over I made stuffed chicken with it a few nights later. Great recipe

Cranberry Sauce

This was cranberry sauce had great flavor. The only thing I did different was add a cinnamon stick while it cooked. Came out wonderful.
