ratatouill: makes five 6oz servings @ 97cal 16carb; 3.1Fat each; saute (few minutes) 1TB olive oil, rough cut lg Onion & lg Red Bell Pepper; when translucent, set aside; saute lg diced 8oz zucchini, 8oz summer squash 5 mins, then add 10oz can Italian seasoned (Hunts) Diced Tomatoes; fill can w/1/2Cup water, 1TB cornstarch and add that to pot; simmer 5 minutes; combine cooked Onion & Pepper; simmer on low 5 minutes, stirring continually. (do not simmer too long, as squash is much better if it retains some CRUNCH)(8.25.11) 5-Stars
