Polenta Fries

Made this with store-bought polenta and oven baked them like I would regular french fries. It was really good, though more chewy than crispy. A bit too chewy for my two-and-a-half year old, but my four-year old loved them. Couldn't give them to the baby as a finger food like I had been hoping. I'd make it again only if I had some store-bought polenta kicking around, which I don't usually. I don't think I'd make homemade for this, but then that might make it better!

Potato Leek Soup III

Very, very good. Used much less butter (maybe 1.5 T), and used flour instead of cornstarch (just because I don't have any at the moment). Stirred it into the leeks before adding the broth. Used milk, but less. So delicious and creamy, even without being pureed. Will make again soon!

Oven-Baked Risotto

Great basic recipe. I added sautéed onions, garlic, basil, oregano, and canned tomatoes. Used a cup of white sauce instead of the canned soup to make it healthier. Forgot the parmesan at the end, and it was still great. Will use this as a base -- exactly what I was looking for! Thank you!

Quick and Easy Hollandaise Sauce in the Microwave

So tasty and easy! I had to microwave it longer, maybe 40 seconds. I just did it in 10 second increments until it thickened up. Will be making this again. Thank you!

Love this recipe! Love that it's a one-bowl recipe, and that I don't have to separate the eggs. I sub in whole wheat flour and leave out the sugar for healthy and LIGHT AS AIR waffles!

Cherry Cheesecake

Tradition in husband's family, and they all liked this version. Theirs usually has whipped cream on top, though. Doubled recipe to make a 9x13 pan. Expensive to make.

Raisin Cookies

These were okay. Not really anything special about them, except that you don't need baking powder to make them (I was out). I would only make them again if I needed cookies and was out of baking powder. Not bad, just not spectacular.

Tex Mex Black Bean Dip

Yummy! Have used this occasionally for supper. All pantry ingredients, at least after I made some substitutions. Used canned tomatoes, salsa, frozen corn, and left off the cilantro (though I'm sure that would make it even better, I just don't usually have it on hand). Healthy and delicious!

Quick and Easy Pizza Crust

I've made this many times now. It is very good and easy. I love that I don't have to let it rise. It makes a nice, thin crust, not heavy at all. Very easy to roll out. No need to ever use a store-bought crust again!

Oatmeal Date Cookies

Pull-Apart Garlic Buns

These buns were very good. I made them plain to go with Thanksgiving dinner. I mixed the dough up early, then put it in the freezer. Later, I pulled it out to thaw and rise before baking, so that it was perfectly timed with dinner. Thanks!

Cheesy Beef 'n' Rice

A very traditional sort of casserole. Loved that I didn't have to use instant rice or precook the rice. Also loved that I could do it all in my cast-iron skillet -- easy clean up! Used regular onion instead of dehydrated, and lots of garlic, so it was absolutely not bland. We all loved it, though we don't usually eat casseroles :)

Pumpkin Chiffon Pie

This is the absolute best recipe. I made this a few years ago, and then couldn't remember where I found it. My husband has been asking for it ever since! The only thing is the raw eggs, but if there's someone there who can't eat it, there's usually another dessert they can have. It's worth it!!
