Michelle's Coconut Chicken Curry

This wasn't my favorite. Kind of a dull flavor. I used a fresh coconut ... not sure if that was better or worse to use. I probably would have liked it a lot better if I had used different vegetables. The cauliflower was much too bland for this particular recipe. Plus I ended up with way more cauliflower than needed. Some heartier, more flavorful vegetables probably would have made a world of difference.

Deep Dish Potato and Pumpkin Pie

I thought this was good, however I think it could have used a little more "kick". I am thinking about making it as a Thanksgiving side dish perhaps with some chili powder, red pepper flakes, or something of that nature. Or maybe some ground turkey or sausage would be good. I did not make the crust, but I thought it would make a better side dish than a pie.

Caramel Apple Pork Chops

Delicious! I thought this recipe sounded different, and I happened to have everything on hand. I omitted the salt and pepper (I figured it could be put on later - my husband put it on his but I left it off). I used salted butter because that is what I had. I added more brown sugar and cinnamon to taste. I do think one apple is probably fine. I only put 2-3 slices on top of each pork chop. But since I cut up more apples, I used the remaining sauce (I had doubled the sauce) and threw some extra apples in there to make a yummy dessert! =]

Garlic Butter Shrimp

Simple and delicious! I used pre-cooked, frozen shrimp, so I didn't have to cook it quite as long. Instead of measuring out the lemon juice, I just used about half of a lemon and it tasted great. I also sprinkled in some lemon pepper seasoning. I didn't have time to make rice, so I actually just served it over Ramen Noodles (I know ... classy ... but it was just me and my husband =]) I had the chicken flavor on hand, but I bet shrimp flavor might have been even better. We both loved it! Definitely a good one to make when short on time.

Greek Garbanzo Bean Salad

Nice and refreshing! =] I made only a couple of changes. I had a carton of cherry tomatoes, so I just went ahead and used all of it. I also had a 5 oz. container of feta cheese, and probably would have used all of that too, except I wanted to save a little bit for another salad. I left out the onion, but only because I don't care for them. The only real suggestions I would make is to add more feta, and probably use less Italian dressing. I think it turned out a little too mushy with the amount this recipe called for. Perhaps add it little by little to see what consistency you are happy with.

Pina Colada Pork Chops

I changed this recipe around to be more like an actual pina colada, and it turned out amazing! I only gave it 4 stars because of all of the changed I felt I had to make, but I didn't make it the original way. It just seems bland. First, I marinated the pork longer than what it says to do - probably about 30 minutes. I added a full lime to the marinade, and then added some limeade to completely submerge the pork chops. I used fresh coconut water, and ended up using all that was in the coconut (I wanted more coconut flavor than what the recipe called for). I added about 3 tablespoons of rum extract (I liked a lot of rum flavor too - others may want to use less). I also added a small can of crushed pineapple. Then to thicken it, I put a bit of corn starch in it, boiled it, then simmered it for about 10 minutes. The end result was fantastic. Next time I may use coconut cream instead, and maybe even some real rum.

Slow Cooker Chicken Taco Soup

Delicious! I made it almost exactly as written, except I was a little worried about the beer since some reviewers said it gave it a weird taste. I only used 8oz of beer and the other 4oz I replaced with chicken stock. I am sure it would have been just as delicious if I had left it alone. Will definitely make again!
