Good Old Fashioned Pancakes

These pancakes are awesome. Literally the best pancakes I have ever eaten. I make extra because even without syrup, they are yummy to nibble on later. This is one of those recipes where you have to follow the directions exactly. For instance, if you don't cook them on medium high heat, they don't fluff up as nicely.

Radish Top Soup

Another "wanted to use my radish greens instead of just throwing them out." I substituted milk for the heavy cream, which is a bit of a stretch but my goal was to combine ingredients on hand with radish greens into something edible, and this recipe met that goal admirably. Also, since potatoes, onions, and milk are all cheap, and the radish greens were "free", this made for an inexpensive side dish. And tasty as well. I will definitely be making this with our radish tops from now on! UPDATE: I have to change this to five stars because my wife has started buying radishes just so we can make this soup. She doesn't like radishes though, so now we're eating the tops and throwing away the radishes. Not what I had in mind when I searched for this recipe!

Curried Butternut Squash and Pear Soup

Awesome recipe. Works with a variety of root vegetables/squashes/etc. We made it into a Butternut Parsnip and Rutabega Soup and got raves.

Green Eggs and Ham Quiche

Green eggs and ham came out all runny. I do not like them Moneypenny. I would not eat them with some changes. I would not eat them cooked on ranges. I would not eat them with thyme or garlic. Never mind that yucky Bisquick. The thought of this fills me with dread. Try the Spinach Quiche instead.

Baja Style Fish Tacos

I made this recipe but significantly simplified(see http://allrecipes.com/customrecipe/63702805/quick-and-easy-baja-style-fish-tacos/): I used frozen, beer battered fish fillets and premade pico de gallo. I also left out the ranch dressing (though I had some on hand in case it was needed). Those three changes slashed the ingredient list to a cardinality of five, which was within the realm of a weeknight dinner. But a fancy one! The flavors and textures worked great together and even my 3 year old ate some. Well done!

Chili Sauce

Just what I was looking for. I used tomato paste + water as the base. Also I replaced the allspice with paprika (I ran out of chili powder) and added some tabasco sauce. Furthermore, I boiled it in a saucepan for a few minutes to meld the flavors together. I know it seems like I am rating an entirely different recipe, but this got me going in the right direction, and for that I tip my hat.

Naan

The best naan I have eaten since I moved to the West coast. I put four cups of flour in at once and luckily decided to mix it before adding the last half cup of flour, and even then there was too much flour - the dough came out tough and chewy. It was still quite tasty though. Next time it will be even better, once I reduce the flour to 3 1/2 cups as many comments have suggested.

Brown Sugar Meatloaf

A great meatloaf recipe. I made the following modifications: only used 1/4 cup of brown sugar. added 1 tablespoon of Worcestershire sauce to the ketchup/brown sugar mix. used 1/2 cup of milk and 1 egg. add 2 cloves of garlic to the meat mixture. used a cup of seasoned bread crumbs instead of the crackers.

Gourmet Mushroom Risotto

I did a little experiment. I made two batches of this, following the ingredient list almost to the letter (the single exception was that my grocery store was out of chives so I had to substitute green onions). I made one batch the traditional way per the recipe, and the other batch in a rice cooker. Without telling them the difference, I asked my guests to try both and tell me which they liked better; most said they tasted the same, and those who I managed to squeeze a further opinion out of said that they preferred the rice cooker version. So much for tradition! That said, I will be making this recipe again, just with the simplified instructions.

Exchange Gang Pasta with Shrimp

I took the fancypants off this recipe, by which I mean I made lots of substitutions with stuff I had around the house that was all a little simpler. And it was still quite good. The subs I made were that I replaced the shallots with onions, the shrimp with chicken and extra garlic, the white wine with cooking sherry, the half-and-half with milk, and the grape tomatoes with romas. Next time I make it I will cut back on the lemon juice just a smidge; it wasn't overpowering but it was detectable. Or maybe I'll fresh squeeze a Meyer lemon.

Make-Ahead Vegetarian Moroccan Stew

I made a variation of this recipe and it was delicious. I mostly stuck to the recipe for the spice mixture, though I did substitute thyme in place of the turmeric (three of the five letters of "thyme" are in "turmeric"; and turmeric is yellow, and thyme has a "y", so I'd say they're about 3.5 letters overlapped, which is 70%!) As the top reviewer suggested I put in whatever vegetables I had in the house: kale, potatoes, zucchini, carrots, yams, onion, black beans, and a can of tomatoes. All of the flavors melded wonderfully and made a hearty and delicious dish.

Brisket with BBQ Sauce

The liquid smoke flavor was... disconcerting. My wife made me take the leftovers in my lunch for a week. Each day I put it in the fridge with a "please do not eat" sign and it was gone by noon. These people give new meaning to the phrase "cow-orkers."

Sloppy Joes II

This is very similar to the sloppy joe recipe I cobbled together from various other recipes. The only differences are that I add some Worcestershire sauce, and I use tomato paste instead of ketchup. It's delicious.
