Acorn Squash

Jamie's Cranberry Spinach Salad

A friend asked us to bring a salad for dinner. We were out of lettuce and tomatoes, but we had some spinach and cranberries. I have to say, this was the best salad I have had in recent memory. I had to improvise a bit based on what we had on hand (substituted sunflower seeds in place of the almonds) and chose to do so in other ways (used less than half the recommended sugar), but overall I stayed relatively true to the recipe and was rewarded for doing so.

Grilled Peanut Butter and Jelly Sandwich

There's something about the melty deliciousness of peanut butter on toasted/grilled bread that always seems to hit the spot. I like mine with fluff (marshmallow creme), which also melts.

Radish Top Soup

Another "wanted to use my radish greens instead of just throwing them out." I substituted milk for the heavy cream, which is a bit of a stretch but my goal was to combine ingredients on hand with radish greens into something edible, and this recipe met that goal admirably. Also, since potatoes, onions, and milk are all cheap, and the radish greens were "free", this made for an inexpensive side dish. And tasty as well. I will definitely be making this with our radish tops from now on! UPDATE: I have to change this to five stars because my wife has started buying radishes just so we can make this soup. She doesn't like radishes though, so now we're eating the tops and throwing away the radishes. Not what I had in mind when I searched for this recipe!

Tomato-Curry Lentil Stew

I wasn't expecting too much, since there's not a lot of spices in this dish, but this turned out really tasty. On the other hand I was expecting it to have a curry flavor, which it did not. Next time I make this I will be quadrupling the curry powder.

Sausage Casserole

Delicious, even more than I expected. My wife loved it too and she's not normally as much of a potato fan as I. Naturally, I made a few modifications: used turkey italian sausage because that's what I had; added garlic and chopped jalapenos; left out the cottage cheese because I didn't have any; and finally, baked it at 425 for 40 minutes because I was impatient. You might call this a resilient recipe.

Brown Sugar Meatloaf

A great meatloaf recipe. I made the following modifications: only used 1/4 cup of brown sugar. added 1 tablespoon of Worcestershire sauce to the ketchup/brown sugar mix. used 1/2 cup of milk and 1 egg. add 2 cloves of garlic to the meat mixture. used a cup of seasoned bread crumbs instead of the crackers.

Quinoa and Black Beans

A great recipe. At the last minute I got too lazy to open the cans of corn and black beans so I left them out. I crossed out "and Black Beans" on the printout first to make sure it would be ok. It still came out yummy! My wife has asked for me to make it again every day since.

Big Soft Ginger Cookies

My wife and friends couldn't get enough of these cookies. I didn't have molasses so I substituted 50% cup honey + 50% maple syrup. Great cookies for a cookie sandwich - two cookies joined together by some still frozen whipped topping.

Naan

The best naan I have eaten since I moved to the West coast. I put four cups of flour in at once and luckily decided to mix it before adding the last half cup of flour, and even then there was too much flour - the dough came out tough and chewy. It was still quite tasty though. Next time it will be even better, once I reduce the flour to 3 1/2 cups as many comments have suggested.
