Take-Out Fake-Out Pollo Con Crema

Delicious! I did make a few minor substitutions. Instead of heavy cream I used cream cheese - 87 pounds of it seemed heavy enough. I didn't have bell peppers on hand so I rang a bell - hopefully blue is a good enough substitute for red. I don't live in California (Anaheim or otherwise) so I left out the optional chilies. And finally, my name is not Frank but I am red hot enough that I left that out as well. Overall I thought it was a pretty good home version of pollo con crema.

Baja Style Fish Tacos

I made this recipe but significantly simplified(see http://allrecipes.com/customrecipe/63702805/quick-and-easy-baja-style-fish-tacos/): I used frozen, beer battered fish fillets and premade pico de gallo. I also left out the ranch dressing (though I had some on hand in case it was needed). Those three changes slashed the ingredient list to a cardinality of five, which was within the realm of a weeknight dinner. But a fancy one! The flavors and textures worked great together and even my 3 year old ate some. Well done!

Gourmet Mushroom Risotto

I did a little experiment. I made two batches of this, following the ingredient list almost to the letter (the single exception was that my grocery store was out of chives so I had to substitute green onions). I made one batch the traditional way per the recipe, and the other batch in a rice cooker. Without telling them the difference, I asked my guests to try both and tell me which they liked better; most said they tasted the same, and those who I managed to squeeze a further opinion out of said that they preferred the rice cooker version. So much for tradition! That said, I will be making this recipe again, just with the simplified instructions.

Easy Weeknight Creamy Chicken Alfredo

Not bad, but to be honest I don't know that the canned good helped, and overall it was just a little bland. I did make some perhaps significant modifications, which you can judge for yourself at my customized version http://allrecipes.com/customrecipe/63436137/creamy-chicken-and-mushroom-alfredo/detail.aspx. To summarize, I added vegetables and subtracted fat (left out the butter and used milk instead of cream). I am not one to eat meat swimming in fat on a weeknight - that would be a special occasion kind of meal.

Creamy Chicken and Mushrooms

My wife and I both enjoyed this. We didn't find it bland, despite being anchored and/or primed by the other reviews. We did add a little bit of parmesan, but we were out of garlic in any form, so that's a wash. Don't get me wrong, I love a dish that punches you in the face with flavor as much as the next guy, and this wasn't that dish... but it was still a perfectly enjoyable weeknight meal.

Quickie French Onion Soup

Quick(ish) and easy. The longer you let the onions caramelize the better, of course - up to an hour (but it just requires patience, not much attention). I replaced the beef broth with cooking sherry, though if I had beef broth on hand, I think it would have been more authentic. I am going to try this on my mother - wish me luck!

Exchange Gang Pasta with Shrimp

I took the fancypants off this recipe, by which I mean I made lots of substitutions with stuff I had around the house that was all a little simpler. And it was still quite good. The subs I made were that I replaced the shallots with onions, the shrimp with chicken and extra garlic, the white wine with cooking sherry, the half-and-half with milk, and the grape tomatoes with romas. Next time I make it I will cut back on the lemon juice just a smidge; it wasn't overpowering but it was detectable. Or maybe I'll fresh squeeze a Meyer lemon.
