Double Tomato Bruschetta

I made this over the holiday weekend for my parents & in-laws. It was a huge hit for a group that can be hard to please. I followed the directions, and also brushed the bread with EVOO and baked for 5 minutes at 400 degrees prior to adding the toppings. I will definitely make this again, it was wonderful.

Sloppy Joe Sandwiches

I have made this before, and I was just searching for dinner ideas, and remembered how my family all liked this. Its easy and I usually stick to the recipe, but I do add in a bell pepper, fresh onion instead of the powder, and I have also added thinly sliced zucchini to make sure we get some veggies.

Peach-a-Berry Pie

Great taste. We used a store bought Pillsbury rollout crust to save time. It was a little runny at first but that is only because we could not wait to eat it and we ate it almost right out of the oven. It does take longer to cook, in fact it took me 10 minutes at 400 and then 55 minutes at 350. I also used frozen peaches and frozen raspberries.

Chicken Noodle Casserole

I cook for 6 people, 4 picky kids, 1picky husband, and myself. All 6 of us agree this is a keeper. I did not have the savory so I used just poultry season, so I would like to make it again using the savory. The other suggestion that I have is to decrease the broth just a bit if you like a thicker dish. I cooked it according to the recipe, but I may decrease to 3/4 of the suggestion next time. Tasty!

Delicious Ham and Potato Soup

This is a big hit in our house. I like to subsitute turkey ham from the regular ham, and you cannot tell the difference.

Chicken Fried Chicken

So I made this last night for my family of 6, and it was a hit according to everyone, which doesn't happen that often. I added a tablespoon of cajun seasoning to it, but I thin it would have been good even without it. It was great served with home made mashed potatoes and sauteed corn! Wonderful!

Cranberry Upside-Down Coffee Cake

Fast and Friendly Meatballs

This was excellent, and my family who usually frowns upon ground turkey ate every last meatball. I doubled the recipe for my family of 6 plus a guest. I used just the egg whites, a splash of water, salt, pepper, plain bread crumbs, and I added Italian seasoning. Cooked them as the recipe states, and then added some to BBQ Sauce and others to marinara and then make meatball sandwiches with them. The meal was a huge hit, and had "must make again" comments from the kids.

Creamy Potato Pork Chop Bake

This was good! I did add garlic, green onions, thyme, salt & pepper to the pork and I diced it up. I also used fat free cream of mushroom soup, 1 cup of sour cream, and just a 1/4 cup of milk for the potato mixture. I seasoned the potatoes with S & P, and some paprika as well. I used cubed potatoes and let it cook a little longer it was great!

Artichoke Spinach Dip

One word, EXCELLENT. Just as good if not better than the dips that the restaurants serve. I followed the advice of the other reviewer, decreased the cream cheese, sour cream, but increased the artichokes and spinach, and sautéed the garlic. It was a huge hit for out football playoff party!

Italian Pasta Salad I

Very good and a good alternative to pasta with plain Italian dressing. This is a definite make again. I omitted the onion because my kids don't like it and I added salami, totally delicious. I used a store brand dressing to save some money and I used reduced fat to save some calories!

Baked Ziti I

This was wonderful. I followed the others advice and reduced the sour cream by half and added 3/4 cups of low fat ricotta. In fact- I used all low fat cheeses and it turned out great! Thanks for te recipe!

Slow Cooker Pulled Pork

I have made this now twice- once as a trial run, and the other for a large family reunion. Each time, everyone has raved about it and wanted the recipe. It is a big hit, and could not get any easier! This is a keeper!

Oven-Fried Pork Chops

Wow, so easy and so good. Here is what I did, I used Italian bread crumbs like many others. I added two tablespoons of butter at the beginning and two more after I turned them. I needed a little longer than the recommended 20 minutes cooking time!!! My boys and my husband loved them!!!

Peppered Shrimp Alfredo

This was awesome. I sautéed my veggies in some white wine before adding the shrimp- just a little more flavor! I wouldn't change a thing- it's perfect! My husband and my son both agree this is a keeper!!!!!

Marinated Baked Pork Chops

Very easy and delicious. I grated two cloves of garlic, and chopped one half of a yellow onion and sprinkled thyme on top of the chops before pouring half of the marinade. I also covered them and baked for thirty minutes before removing the foil and baking for an additional 25 minutes.

Philly Cheesesteak Sandwich with Garlic Mayo

This was delicious!!!! I seasoned the meat before putting it into the skillet with grill seasoning. While it was cooking I added salt and oregano. I also toasted the rolls before spreading the mayo! Next time I will add some jalapeños and mushrooms!!!!!

Salsa Chicken Rice Casserole

This was good, I would make it again but I need to play with the chicken more. I pan cooked it as some of the reviewers recommended, and seasoned it with fajita seasoning and it got a little too dry. Next time I will add a bell pepper or two for some extra color. My husband and kids all said it was a keeper!
