Alyson's Broccoli Salad

I have been making this salad for 5 years now, from this exact recipe, and I am, like many others, constantly begged for the recipe! The only thing I do differently is I use dried cranberries instead of raisins. I love the tart flavor and bright color of the cranberries. People love love love this salad. Also sometimes I spoon a little of the bacon drippings into the salad :) It doesn't get any better than this! Ok so I lied I do a couple things different... I only use the actual flower part of the broccoli chopped into very teeny tiny pieces...so I use about 4-6 heads of broccoli, which is fine for me because I feed the stems to my bunnies. The texture of it is so decadent this way. YUMMO!

Salsafied Chicken and Rice

Um...can you say DELICIOUS!!?? This is such a fantastic recipe! The version I make takes a bit longer because I don't use instant rice: If I have it, I like to use 6-8 bone-in skinless chicken pieces...season them and brown them in olive oil. While they're browning I also throw some sliced yellow onions in the pan and get them all nice a browned as well. Then I add the chicken broth and salsa (I always use the fresh stuff from the deli section of the grocery store packed with cilantro!!), also add 1 cup uncooked brown rice and 1 cup water..and as a nice nutritional bonus, a can of black beans. Turn to low, cover and simmer until the rice is cooked, about an hour, adding water if necessary. Cilantro is a yummy garnish. Also, if you use the small cubed chicken as in the recipe or just pick some chicken off the bone in my version..this makes amazing taco/burrito filling!

Apple Pie by Grandma Ople

THIS IS THE PERFECT PIE! For years I have been making my Grandmother's pie recipe but decided to venture out and found this recipe last year. It is outstanding! Important note: Many people are saying that they pour the sauce over the apples/mix it with the apples first and do not pour it over the lattice/top crust. This is one of the most important steps in this recipe!!! It makes this decadent caramelized layer that is to die for, so if you are skipping this step you are missing out! I do add cinnamon and nutmeg to this recipe for personal taste, but I believe this recipe is also perfect without it! I have read reviews where people use apple juice instead of water, and I think I will try this next time. Also, making a crust is fairly simple and doesn't take too much time, and the result is 10 times better than store bought! I use an apple cider vinegar and half butter half shortening recipe! Try it! Make sure you cut in your fat in two steps so that some of the fat is in bigger chunks= flakier!
