About this Cook
I was born in Florida & continue to live here. My family does not have any deep cooking traditions (baking is their thing), so I'm totally inept in the kitchen. Not wanting to continue the tradition of boiled....everything (chicken, vegetables, you name it), I'm trying to learn how to cook. I don't aspire to become a master chef, but would like to have at least 10 recipes under my belt.
My favorite things to cook
I can really only cook 3 things, but want to add a few more recipes to my repertoire. My favorite things to cook (& the only things I know how to cook) are mac & cheese (from the, chicken broccoli honey wraps, & pigs in a blanket.
My favorite family cooking traditions
My family isn't the best at cooking food, but excel at baking. Cookies, pies, cakes, candies...everything out of the oven is delicious (especially during the holidays).
My cooking triumphs
I've *almost* mastered cooking white rice (puerto rican style). I think being able to cook anything without help is a triumph for me (even if it comes in a box)
My cooking tragedies
wow...everything. I think the worst was throwing a bunch of sauce & noodles into a pot with greasy meat (before draining). *gag* This morning I was trying to fry some bacon & it turned into little black char pieces...that was pretty disappointing too :/

Fresh Pear Pie
I used about 2/3 of the spice mixture which made for a more savory pie (the pears I used weren't too sweet). Regardless of using 2/3 or all the spice mixture, this makes for a really wonderful pie. Absolutely delicious!

Merritt's Butternut Squash Gratin
Extremely expensive to make. If recommend doubling on the squash mixture to get a thicker squash layer. Otherwise the breadcrumbs are overpowering.

Spinach Chickpea Curry
Super easy & tasty! I doubled up the portion size & added sweet potato & cauliflower. Like others, I subbed the curry paste for powder, but it still lacked some spice. Next time I'll use a curry sauce cube as well to give it a boost. Great recipe so you can make a large portion to eat throughout the week.
