Italian Cream Cheese and Ricotta Cheesecake

I've made this cheesecake twice now. The first time I followed the recipe exactly. The texture was exactly what I was hoping for and it tasted great. Unfortunately the cake developed a gigantic crack while it was cooling. I think the baking temperature was too high and it got overbaked/dry. I really loved the flavor so I made it again with a couple alterations. This time around I used only 8oz of sour cream, and added another 8oz of cream cheese. I made a cinnamon graham cracker crust for it. I also baked it at 475 F for 10 minutes, then dropped the temperature to 200 F for an hour. I let it sit in the oven for about 3 hours after it was done baking, then set it on the counter to cool completely before putting it in the fridge. I blended up some fresh strawberries, and diced a few and mixed them together to top the cake. This time it didn't crack, the cake was very soft with a fluffy texture, and it tasted amazing! Quite possibly the best cheesecake I've ever had.

New York Cheesecake III

This was my first ever attempt to bake a cheesecake and I settled on this recipe. It was pretty easy to prepare. I had a couple hiccups along the way but in the end the cake came out looking really nice and tasted delicious. I served it after Thanksgiving dinner and everyone enjoyed it. This cake is extremely rich. I recommend this recipe, especially for beginners like me.

Grandma's Green Bean Casserole

This is the first green bean casserole I've made and I altered the recipe a bit based on other reviews. I used frozen green beans and boiled them for a few minutes, then I cut them in half because they were long. I used french-fried onions instead of fresh onions. I also crumbled half of the french fried onions and mixed them with the crackers as noted in another review. I served it for Thanksgiving and it turned out great. My guests didn't believe it was my first time making a green bean casserole and everyone loved it!

Supreme Strawberry Topping

I made this to top the New York Cheesecake III. It came out good but I think next time I'm going to nix the vanilla and reduce the amount of sugar. I was hoping for a more fresh strawberry taste but it came out a bit too much like a syrup. This recipe is a great place to start however.

Jalapeno Poppers of Champions

I made a batch with real bacon and another with vegetarian bacon (for my veggie friends,) and the real bacon ones are much better. The recipe is pretty bland as is, so spicing up the cheese is recommended. I didn't use toothpicks, but I think I should have just to be able to handle them better, these suckers are greasy. Transfer them to a paper towel before plating them to get rid of some of the grease!
