My family and I have never been a fan of Collards, but these are wonderful! I even made a second batch, the next day. I did make a few changes to the recipe, I used an entire pound of bacon, no oil, one X- large onion, fresh ground pequin pepper instead of pepper flakes, and did not have chicken broth, so substituted white wine instead (As with many of my recipes I use a bottle of 2Buck Chuck Chardonnay instead of chicken broth or 2buck chuck cabernet instead of beef broth. The Trader Joe's wine is cheaper than the broth too). Added some brown sugar and cider vinegar as others suggested and YUMMY!
