mmm Spicy!! loved it! had some for breakfast this morning. i didn't have the green chilis but had a can of jalapenos, so used them instead. lots of flavor and heat in this one.

Kickin' Collard Greens

My family and I have never been a fan of Collards, but these are wonderful! I even made a second batch, the next day. I did make a few changes to the recipe, I used an entire pound of bacon, no oil, one X- large onion, fresh ground pequin pepper instead of pepper flakes, and did not have chicken broth, so substituted white wine instead (As with many of my recipes I use a bottle of 2Buck Chuck Chardonnay instead of chicken broth or 2buck chuck cabernet instead of beef broth. The Trader Joe's wine is cheaper than the broth too). Added some brown sugar and cider vinegar as others suggested and YUMMY!

Roasted Beets with Feta

generally have to be in the mood to eat beets, but these are yummy. The Feta cheese and the balsamic vinegar give it just the right tang!! Made a large batch and very glad I did, as we ate half of them with lunch. ;)

Nice and light and like everyone else already said different than the norm! Yumm! And must agree with others it is best on cinnamon graham crackers. Also have some almond cookies to try it with.

Roasted Pumpkin Seeds

The hubby and I couldn't stop eating these! I soaked my seeds in salt water overnight then let the seeds dry all day. followed the directions in the recipe and they were great! Haven't made pumpkin seeds in years. Thanks for the recipe~

Quinoa Pudding

Made this pudding as a breakfast cereal. I loved it and so did my husband and son. Very nice and light but filling. I added some raisins and sun dried apples and omitted the sugar, turned out great! Def. a Keeper at my house. Thanks for the recipe!

Slow Cooker Beef Stew I

Excellent and EASY! Loved it! I added sweet potatoes in addition to the white potatoes and it gave the stew a very nice rich buttery flavor. If you like your stew with lots of kick/spice add more than the recipe calls for, but if you like a nice smooth stew this is fantastic as it is. Best Stew I have made in Years!

Delicious! and Easy! My daughter gave me an A+ and the hubby said it could not have been any better! I did not have a 7X11 dish so I used a 9 X 13 used 50% more lady fingers and 3X the coffee/rum blend and it turned out Great! Could have used more whipping cream but it was great the way it was.

Grilled Portabellas with Caramelized Onions and Avocados

Loved it! My Husband gave it 5 stars and that is hard to get! I did change it a bit as I did not have an avocado. Instead, I added some fresh picked rosemary and thyme to the mushrooms as they were finishing on the grill, added some Swiss cheese and then added sliced tomato with fresh picked basil. Served it on a toasted bagel thin bun. Delicious!!

Grilled Apple and Swiss Cheese Sandwich

This has to be the best grilled cheese ever! I used Monterey Sourdough bread instead of wheat, and butter instead of olive oil... Wow Can't wait for my husband to try this! Served it along side a bowl of tomato soup that contained fresh tomatoes, onions, garlic, peppers, eggplant, smoked reduced sodium bacon, rosemary, and chive. That puts a twist in the old Grilled Cheese and Tomato Soup Favorite!
