Hong Kong Sweet and Sour Pork
This really is as good as everyone says. It's better than what you get at the restaurants, minus the msg! My kids loved it too. I only had a little bit of corn starch on hand (no potato starch -- where do you buy that?!?) so I used regular flour for the breading. Worked great. Just make sure the oil is hot enough before you add the meat.

Whole Wheat Pancakes
These are fantastic. Following suggestions from others, I swapped out oatmeal for the wheat germ, as well as applesauce for the butter. They were totally delicious. (Of course I was liberal in cooking them in butter, which is where it gets the flavor best.) We added sprinkles, raspberries, slivered almonds & chocolate chips (some with a combination of 2 or 3), and they were the best pancakes ever. Delicious & healthy-ish.

Pumpkin Pancakes
Great way to use pie-making leftovers. Last night I made a pumpkin pie, and had left over pumpkin puree, and extra pie filling that didn't fit in the shell. I didn't have the heart to throw it away after all the work in roasting the pumpkin, so kept it for pancakes this morning. I substituted last night's pie filling (mixture w/ evaporated milk, pumpkin, spices, etc.) for the milk, and otherwise followed the rest of the recipe as stated. Fantastic!!
