Pecan Pie Tarts

What the heck did I do wrong!? I made the crust as instructed...divided the dough into 30 very large sized balls for my mini muffin tins...then I don't care how good you are, 1/4C of butter does NOT cream into 1 1/2C of packed brown sugar; dry crumbly mixture yes...then after filling the crust (which I used the back end of a wooden citrus juicer dipped in flour to create the well of the crust-worked great) I had more than half the filling remaining.....they are still in the oven so I have tried them but again, don't know what I did wrong...doesn't look like any other reviewers had the same trouble....I'm going to freeze the leftover filling....and remain perplexed....

Perfumed Coconut Cake

This was not a BAD cake..just was not very "Coconutty". As another reviewer, I did NOT achieve any coconut aroma...it scaresly tasted like coconut. Cake was moist and tasty..but lacked any real coconut flavor. Also, I should have read all the reviews (or at least paid heed to the ones I did read) that the frosting was horribly sweet. I frosted between the layers with a chocolate frosting to break up the icky sweetness. I will not be making this cake again. Less than impressed.

Eggplant Parmesan

LOVE Eggplant parm, but hated the breading and frying of other recipies. I have made this several times and in an effort to be quick....I spray my cooking sheet with olive oil, sprinkle the top of the oil with garlic powder/dried garlic, then place the egg plant slice on the cookie sheet. I spray the top of each piece of eggplant w/the Olive oil mister and sprinkle with garlic powder/dried garlic.

Pumpkin Ginger Cupcakes

Couldn't find instant pudding, used cook and serve instead and worked just fine (of course I don't know how they taste using instant). Based on other's reviews, I also used half butter/half apple sauce. I made my own cream cheese based frosting with a cooked flour/milk base (so I wouldn't have to use much sugar) as previous posts indicated the cupcakes were almost too sweet. My family is loving these. Wish the ginger were a bit more previlant. Maybe next time I would add more of both gingers.
