Quick Classic Gazpacho
This was a good starter gazpacho, and was handy because I could use cucumber, tomato, garlic, cilantro, and jalapeno from my garden! I didn't bother adding water because it became soupy enough in the food processor. It could have used more garlic, and in general there was something missing- cumin and fresh lemon or lime would have done the trick.

Marinated Black-Eyed Pea Salad
This is a great recipe! The only changes I made were to use a bag of dried black-eyed peas and an orange and a yellow pepper instead of red. This salad has just the right amount of spice to satisfy spice lovers but not overwhelm your more cautious friends. When I got home late and hadn't eaten dinner, I found myself eating way more of this than I should have, but then I reminded myself how healthy it is and kept eating!

Tahini Butter Cookies
I agree these cookies are good! I changed it by using dark brown sugar and some cinnamon, though you can't really taste either. The only problem is that like others said, these are fragile cookies that crumble easily. I think the trick is just to make very small cookies. This was a great way for me to get rid of the rest of my tahini!
