Tortilla Ham Pinwheels

I change it up, just a little. Ham with cream cheese and chopped olives; roast beef with cream cheese and dijon mustard...sometimes I add a slice of cheese...they never last

Salsa Chicken

Of course, I changed it up to suit what we had...but the basics of this recipe is great. I cubed my chicken and coated with taco seasoning and let sit while I sauted onions, garlic and celery (what I had), added the chicken and 2 cans of black beans. Cooked the chicken for about 15 minutes. Transferred the chicken mixture to a baking dish, added some peppers, poured on the salsa, covered with foil and baked for 20 minutes. Served over brown rice and topped with a little light sour cream and low fat cheese (we are dieting at my house) And just for fun I cut some strips of corn tortillas and fried in a small amount of oil and put on top!!! YUMMIE

Slow Cooker Chicken Stroganoff

I do not slow cook. So I used chicken tenders cut into bite size pieces, sauted the chicken with some diced onion and garlic. When the chicken was done I added the seasoning and soup (I used a can of Cream of Mushroom and Cream of Celery) and some mushrooms (just cause I love mushrooms) let it cook for about 40 minutes then added the cream cheese. I added sour cream right before serving. The seasoning was not enough for me, so I sprinkled a little creole seasoning on mine. I used the Healthy Recipe soups, together with low fat cream cheese and low fat sour cream, really, really good!!

Sugar Coated Pecans

I have made these twice, first at Christmas and then again at Easter. I made them for my father in law who is diabetic, so I used Splenda. Needless to say I am now his FAVORITE daughter in law!!! Make sure to increase to 2 egg whites, use the parchment paper and ziplock bag, much easier!! I have done pecans, cashews and peanuts, all work great!!!

Spinach Brownies

Wonderful!!! Made for a birthday party. It was all the rave. I made some changes as suggested. I cut the butter, but just by 2 tablespoons. I used one small onion, three cloves of garlic and sauted in the butter, then added about 1/2 cup of sliced fresh mushrooms. I took 10 oz of fresh baby spinach, chopped and added to the onions, garlic and spinach and cooked it down a little. I added some Tony's Creole Seasoning and doubled the cheese, using 1/2 mozzarella and 1/2 fiesta mix. Mixed other items and added a little parm to the top. Yummie

Oatmeal Blueberry Muffins

I was looking for a low cholesterol recipes that would add some oatmeal to hubby's diet. These are great. In reading the other reviews, sweetness seems to be a problem. I used Splenda instead of sugar and added an additional 1/3 cup of brown sugar Splenda. Also substituted applesauce for the oil. You need to reduce the cooking time, mine took 10 minutes at 400. Overall one of the best "good for you" muffins I ever. Can't wait to try with Craisens and other fruit, maybe a few nuts!!

Oven Roasted Potatoes

Okay...all I had was 4 baking potatoes and we wanted fries. Since we are watching our cholesterol this seemed like a good idea..and they are great. I cut my potatoes like fries used whatever spices I had in the pantry (crushed red pepper, celery salt, garlic powder, Tony's and some lemon juice and a little kosher salt) cooked for 20 minutes on a non-stick pan, flipped and cooked for 20 more, they were perfect. LOVE LOVE LOVE them, better than french fries!! Use a ziplock bag to coat your "fries" its much easier clean up!

Aussie Chicken

I had to try this recipe just based on the number of reviews. And it deserves all the rave reviews. Very Very Good and simple and easy to make. I took some good advise from the reviews and prepared the night before. I did not have any corn syrup so I just skipped it, and the sauce the great. Next time I will double the sauce and use some for the green salad!!! The only thing I would change is more spice on the chicken, I do love the spicy and sweet combo, and here in Louisiana we like everything spicy.

Blue Cheese Burgers

Don't try this if you don't love blue cheese. I love blue cheese and thought they were great...very moist. I used grill seasoning, crushed red pepper and kosher salt with the Worcestershire sauce. I grilled on my Wolfgang Puck Grill ... be careful, only flip once and DON'T SQUISH YOUR BURGER, let set for a minute so all your juice don't run out. Yummie

Spinach Chicken Parmesan

In the words of Rachel Ray YUMOO!!! This was so very good. ALWAYS read the reviews before making a dish...the suggestions are great. I added garlic and the roasted red peppers to the sauce, which I doubled. Make sure you season your chicken...I used kosher salt, white pepper, a little crushed red pepper and garlic (can you tell we like garlic). This would be a great sauce by itself. I may pan fry the chicken next time, using the sauce to put over some pasta.

Bread Pudding III

This was my first attempt at Bread Pudding...LOVED IT !!! I too thought too many eggs or not enough bread, so I added 5 more slices of bread, and let it soak about 15 to 20 minutes and added a little brown sugar on top.....very, very good.... Will make again!!

Chili Dog Casserole II

We love chili dogs...so this was right up our alley. I used Wolfe brand Hot chili cause we like it spicy and I like chopped onions on my chili dogs, so I put some on top. I also doubled the cheese, we like a little food with our cheese!

Mexican Cornbread II

I used Jiffy cornbread, jalapenos instead of green chilis. I did not have creamed corn, used whole corn, drained and a little sour cream. We loved it!! Its not sweet, but I like the kick of the jalapenos. I would like it cheesier...maybe a little on top right before they are done!! Super cornbread can't wait to make again!
