About this Cook
You would think that if you are born and raised in New Orleans you know how to cook. Not true in my case. My mother was a great cook and she did ALL the cooking. I could "fix" dinner and I really didn't "cook". I married a man who loves to cook and is very good at it. He actually taught me how to cook and now I love it. I love trying to find things that I cook better than Hubby and making his say..."that was really good, can you make it again"!! We have one daughter who is a sophomore in college, and she is finally wanting to learn to cook...Lord help us!
My favorite things to cook
I love Mexican..probably because I am better at it than my Husband and my daughter LOVES it.
My favorite family cooking traditions
Sunday night is "Man and grill" night at my house. Sometimes it means a BBQ, but sometimes its a fish fry or a red gravy. Its always fun until its time to clean up...how many dish towels can men use?? Christmas Eve is always a fancy dinner and Christmas Night.....GUMBO!!

My first cake when I was in middle school...didn't know there was difference between Baking Powder and Baking Soda.....even the dog would not eat it! I did not bake for 20 years after that!

Salsa Chicken
Of course, I changed it up to suit what we had...but the basics of this recipe is great. I cubed my chicken and coated with taco seasoning and let sit while I sauted onions, garlic and celery (what I had), added the chicken and 2 cans of black beans. Cooked the chicken for about 15 minutes. Transferred the chicken mixture to a baking dish, added some peppers, poured on the salsa, covered with foil and baked for 20 minutes. Served over brown rice and topped with a little light sour cream and low fat cheese (we are dieting at my house) And just for fun I cut some strips of corn tortillas and fried in a small amount of oil and put on top!!! YUMMIE
