Zucchini and Corn Gratin

Reviewed: Dec. 31, 2013
I thought this recipe turned out very well. I DID read all the reviews and take that into consideration...some of the things I may have altered were...I used 1 med. size onion, not 1/2 cup, I added zucchini to the skillet after cooking corn/onion/jalapeño, I think that, in addition to the thin slices, made them so much more yummy. I also added a couple TBSP butter to the skillet, people said the dish lacked flavor, I didn't wanna risk it ;) I also added salt, pepper, dash of cayenne pepper, garlic powder & some celery seeds. These made for a VERY flavorful and yummy dish! I don't measure stuff...sorry :( but keep in mind, when seasoning a dish make sure to add enough to season ALL of the dish, not just the veggies on top! stir it all in really well and you'll have a delicious side dish that you WILL want to make again. I didn't use the "Touch of Philly" cheese as I couldn't find it, turned out fine. Enjoy!

Very Easy Risotto

Reviewed: Dec. 21, 2012
I really like this one. I figured there had to be a quicker way to use my risotto, I knew I wasn't gonna take the time to cook it but really like it so went searching for a faster method. I didn't follow the recipe exactly bc of several reviewers stating lack of flavor. I added FIVE tablespoons of butter, to the existing 2. This may sound like a lot but I HATE burnt rice smell, messes up the entire dish and kitchen, so I wanted to make sure it wasn't gonna stick when I sautéed it. (toasted it) also added 1/4 white onion, all I had, minced garlic, 3 tsp I believe, and 1 tbsp of black pepper. I had some black truffle oil so that couldn't hurt right? just a smudge, doesn't take much. I love this recipe, I can see myself using it frequently, tweaking it depending on the dinner and what's in the pantry, etc. I'd recommend it. AND I used risotto rice…I think it's a great rice base for whatever you wanna create.

Corn and Shrimp Salad

Reviewed: Jun. 26, 2012
I think it's delicious! I was hesitant to make it just b/c I'm not used to the corn/shrimp mix. BUT I had already thawed some shrimp and didn't the stuff for the recipe I was going to use. This was so easy to make and very light and yummy! TIP: I used ONE CAN of the steam crisp corn mix, it already had chopped up onion, red pepper and black beans in it. I opened the can, added the 12 or so shrimp I had and tossed in the easy vinaigrette mixture….chilled and ate! It was so incredibly easy I will definitely make it again. You could easily double using 2 or more cans of the corn mixture. I hope you enjoy it!!

Mad Hatter Salad

Reviewed: May 30, 2012
I DID alter the recipe a little….see bottom. The best salad out there, doesn't matter the time of year, occasion, etc…it's always a hit. My roomie had never had it before, said she prob wouldn't like it, I came home from work and it was gone :) It's so easy to fix, cheap for crowd and/or potluck dinner, etc. AND if it starts getting low I simply crush up a pack or two more of ramen noodles, no cooking or toasting, and add them to the bowl, they blend right in and the fresh crunch is delicious! Changes made: There's no way you need 1/2 cup butter, I use a wok to do the noodles, etc and only use 1/4 or so, you can always add if you need to. sunflower seeds are used if I have them, if not the salad toppings mixture you can buy is delicious in moderation. I reduce the sugar to 1/4 and actually INCREASE the part apple cider vinegar(/veggie oil mixture), just to taste, I like the tanginess. Soy sauce can also be added to taste in my opinion, but 1tsp is perfect to start. Just depends on how much flavor you like. It's my favorite to keep in the house, great in every way, THANK YOU FOR THIS RECIPE!
