Whole Wheat Muffins

Good recipe if you're looking for a simple, lightly sweet bread-like muffin. I modified by substituting half of the sugar with Splenda and replacing the vegetable oil with applesauce. I also added 1 tsp Vanilla, 2 Tbsp cocoa powder, 1/2 cup chocolate chips (attempting to appeal to my 3 year old), and 3/4 cup finely grated carrot. I think in general they would be better with raisins, cranberries, or blueberries. A word of warning: if you replace the oil with applesauce, don't use paper cups! Mine stuck to the paper!!!

Best Bread Machine Bread

I just got a bread machine and this is one of the first recipes. It turned out really good! Changes I made: I used regular Active Dry yeast 2-1/4 tsp I I increased the salt to 1-1/4 tsp on the recommendation of a previous poster. I did everything else exactly as in the instructions. My bread machine is supposed to be capable of a 2.5 pound loaf. However this recipe fillled the bread pan to capacity! The texture is nice. The crust is flaky and crunchy. I liked the crust but some people in my family did not. Just personal preference.

Slow Cooker Chicken Mole

My first attempt at making mole. It was good. I appreciate that it didn't include high fat ingredients like lard. This was pretty quick to prepare which is a plus. I'll definitely try this again and maybe use tablets of Mexican drinking chocolate next time.
