This was pretty good! I put it in the slow cooker before I left for work, and cooked it a full 8 hours.
Mods (I used what I had on hand): c/o mushroom soup, homemade croutons (skipped the butter), olive oil to grease the crock, beau monde seasoning on chicken, chicken broth instead of water, and added some carrots and celery.
Next time I'd add vegetables again (onion, green bean, corn) and maybe a layer of sweet potato. I'd choose one or more low-sodium products, but my guest didn't think it was too salty.
