Grilled Steak Salad with Asian Dressing

Quinoa and Black Beans

I decided to make this as a summer salad. I used a box of roasted garlic quinoa (made with veg broth) and leftover corn cut off the cob. Like others, I used only one can of black beans. I added a chopped avocado and a squirt of lime (to help keep the avocado green) and chilled the whole thing. We loved it!

Flash-blasted Broccoli and Feta Pasta

Made this as directed and loved it! Directions don't ever say to add broccoli to the mixture. I did it at step 5 when I added spinach.

Simple BBQ Ribs

Made this exactly as directed (except that I let the cooked ribs soak in the water for about 4 hours). Some of the best ribs we've ever had! My husband loved them and was so thankful I found a way to make yummy ribs without smoking them all day. We will try it again and throw the ribs on the grill for the last part of the cooking.

Black Forest Cheesecakes

When I got home from the store, I realized that I had only bought one package of cream cheese. So, I added a container of low-fat vanilla yogurt instead of a second package of cream cheese. I also cut the sugar to 1/2 cup. I didn't have paper liners on hand, so I just sprayed the muffin pan with nonstick spray and they came out fine. The final product turned out GREAT! I made these for my husband's birthday, and we all loved them.

Chicken Pot Pie VIII

I made this with leftover turkey and already made gravy from our Christmas dinner. I used two premade pie crusts and put it in a 13 X 9 baking dish insread of pie plates. It was absolutely delicious!!

Amazing Gluten-Free Layer Bars

Easy and yummy. I made these for my Dad who is visiting this weekend and has celiac disease. Instead of butterscotch chips, I used Reese's peanut butter baking chips, which are gluten free.

Cranberry Cheesecake

I made this for a party last night. I used two pre-made graham piecrusts to make 2 of them. Also, read on another site that baking at less than 325 risks food-borne illness, so I cooked for 1 hour 15 mins at 325 and it turned out great... no cracks. Also, no fresh cranberries available this time of year, so I made topping using dried, sweetened cranberries simmered with 1/2 rasberry jam, 1 cup orange juice and 1/4 cup brandy until berries reconstitute and sauce thickens. It was delish! Also, use full-fat cream cheese for best texture.

Lisa's Chocolate Chocolate Chip Cake

I made this for a party last night. Used dark chocolate store-brand mix, coffee instead of the water, 1/2 c applesause for 1/2 c oil, and regular-sized chocolate chips. It was a hit! No icing needed; I just dusted it with powdered sugar.

Raspberry and Almond Shortbread Thumbprints

My Mom and I made these cookies every year for Christmas when I was growing up. She called them "poundcake cookies" and I long ago lost the recipe so I was glad to find this again. They are among my and my friends' favorite cookies each year. Another version Mom made was to top each one with a pecan rather than the jam. Excellent cookie!
