Cheddar-Thyme Flaky Biscuits

Superb! If the limit were not 5 stars, I could have given it a lot more. I happened to have some cheddar cheese and fresh thyme on hand or I might not have made this - and I'm so glad I did - it's absolutely scrumptious. And I think I'm going to try substituting other fresh herbs for the thyme - with rosemary and then with dill. Not that the thyme isn't as good as anything needs to be - yum - but just because I think it might be equally good in other ways to go with various foods. I baked these biscuits till they were light golden brown, and then put them on top of a nice, heated, beef burgundy stew and baked it like that for a few more minutes. Thanks for the recipe!

Apple Oatmeal Crisp

I read this wrong the first time I made it and didn't realize that half the crumbles go under the apples and half on top - I'd put it all under and none on top! This time I did it right, and I now agree that this recipe is absolutely WONDERFUL! I do want to cut down the sugar next time I make it, just for the health aspect rather than the taste - it wasn't overly sweet, but I'm just hoping that if I use sweet apples, it can use less sugar. One note - I use thick rolled oats rather than the thin kind, which makes for a much more substantial and crispy crisp than if you use Quaker Oats or a similar thinly rolled oat. I saw some of the negative reviews, and I honestly think there must have been something done in the process of making it that went wrong - like mismeasuring or maybe using instant or fast cooking oats or something - in fact, someone said the crisp mix was powdery, which simply isn't possible if you've used good quality real rolled oats. I've made a lot of crisps, and this was truly one of the best ever.

Banana Banana Bread

Simple, delicious, and moist. I over beat the batter because of realizing I'd missed an ingredient that needed to be added - but it turned out moist and perfect anyway. It rose beautifully - a very appealing looking loaf. I added a tsp. of vanilla and a handful of chopped pecans. The second time I made it, I got into it before realizing I'd mixed it up with a banana oatmeal recipe I'd meant to make - so I just went ahead and added a cup of thick cut oatmeal and a cup of blueberries, and it was delicious. I'm not a baker, so it was just a lucky experiment.
