Roasted Sweet Potato Corn Chowder
Yum! I love it made w/ chicken broth and also about a 1/2 tablespoon of red pepper flakes (which surprisingly brings out a LOT of spice). Oh, I also omit the celery, shallot, and tomato paste.

Chocolate Peanut Butter Swirl Fudge
With some adjustments, mine set AND swirled fine (and looked pretty darn cool in the end). I doubled the amount of chocolate chips (that is, 1/2 cup) and also added 1 tablespoon of butter to the chocolate mixture. It may be my imagination, but when I measured out 8 oz of condensed milk (8oz = 1 cup) to add to the peanut butter chips, there seemed like a LOT LESS than 6 oz of milk leftover (14oz can - 8oz = 6oz). But mathematically there should have been, b/c I made no adjustments to the milk measurements. Good luck!

Scrumptious Strawberry Shortcake
This was amazing. As soon as I tasted it I wanted to whip up a second batch. I used half-and-half instead of heavy cream. I also used the flattened ball method recommended by others, and sprinkled the tops with sugar. I liked the shape of the shortcakes by using this method, but next time I'll make the balls larger, so each serving gets even more of the scrumptious cake/biscuit (even though this means less than 12 balls/servings).
