Thai Peanut Chicken

Sauce was wayyy too thick. I would skip the corn starch completely and lessen the peanut butter.

Maple Cranberry Sauce

I cut the maple syrup down to a cup and still found it a bit sweet for me. But otherwise, the taste is delicious. Reminds me of craisins - only jellied.

I added the scallions chopped up to the sauce and marinated the chicken for 8 hours before cooking it. With those variations I found the chicken to be excellent. I doubled the marinate and served it over rice.
