Exquisite Pie

VERY delicious, and seems to be adaptable. Tastes a bit like chess pie, but more complex. I cut down the vanilla to 2t instead of 1T and substituted regular raisins in lieu of golden and it was all good. Other tips: do NOT make this into two pies. I had two deep dish 9" pies and split the batter, then rolled the crust down to the edge of the batter. If you combined into one large pie the top would burn before the middle set, and it's such a rich pie that you wouldn't really want to have a super deep slice. This would go very well with vanilla ice cream. I thought the lemon juice ingredient would impart some lemon flavor - it didn't, and next time I make this I'll be adding some lemon zest and removing the raisins altogether.

Chinese Chicken Fried Rice II

This is a helpful recipe since the ingredients are on hand, but I was underwhelmed at the taste. There was far too much onion - and way too peppery! I did add canned chicken breast and turned this into a main entree. Next time, I'll reduce the pepper onion by at least half.

Mojo Roast Chicken (Pollo Asado)

I made this recipe and used a whole chicken instead of chicken parts. A visiting friend commented that the smell of the marinade was savory and made her hungry. The chicken marinaded for about five hours and that was enough to suffuse much of the meat with garlicky-sweet flavor. The browned bits of seasonings on the skin was a big plus. This fed my family, including picky children, without any complaint, only compliment! I did serve with rice, but could see how with mashed potatoes and turning the pan drippings into gravy it would've been excellent too.

Lamb Chops with Balsamic Reduction

This was once exceptional recipe. We had very thick chops, over 2", so upped the cooking time to about 5 minutes per side with the lid on to help it cook. The chops came out perfectly medium-rare. The savory reduction sauce paired perfectly and our guest literally picked up the chops to eat every last shred of meat. With new potatoes and a green salad, we felt like we had just stolen a meal from a high end restaurant.

D's Famous Salsa

I used fresh Roma tomatoes instead of stewed, upped the garlic, reduced the onion by a little (the proportion of onion to tomato seemed too high), and took pounds of this salsa to a beach trip for 10 women. It was a huge hit and disappeared the first day. I also kept it chunky instead of blending and drained some of the liquid, since the fresh tomatoes were very juicy. All the changes worked well.

Salad de Colores

Very fun and different spinach salad! I made a giant bowl-ful for a church potluck and every bit disapppeared. My only suggestion would be to buy/make a strong balsamic dressing, as the one I bought was light in flavor and somewhat overpowered by the strong produce elements. Thanks!

Strawberry Delight Dessert Pie

Made this dessert for easter and my hubby and guests enjoyed it very much. Fairly easy to make, yet light and refreshing with the layers of strawberry, cream cheese, pudding and graham crust. I did layer the cream cheese mixture with the strawberries by spreading 1/2 the cream cheese, then 1/2 the strawberries, the other 1/2 cream cheese, then remaining strawberries. Pudding went on top.

Creamy Au Gratin Potatoes

I made this recipe with the "cheese and a half" sauce suggested by a reviewer and without the onion. The texture and taste was good but the sauce was slightly flour-y. Next time I make it I'll do a cracker or bacon bits topping and up the seasoning to include garlic. Otherwise, tasty and satisfying.

Egg-Free Dairy-Free Nut-Free Cake

Wow. My son has severe food allergies and this recipe fit the birthday bill perfectly. Amazing thing is, no one could tell it was allergen-free because it was so moist and delicious. It kept well stored for days. Thanks.
