Just a note- if you choose to add vanilla to the peanut butter & chocolate mixture, do so only AFTER heating it. If you add the vanilla before heating it, it will turn into chocolate peanut butter dough. It tastes good, but doesn't exactly mix with cereal at that point. (I was tired and in a hurry that day.)

Slow-Cooker Chicken Tortilla Soup

This was the very first recipe I tried from this site. My mother requests it all the time. When I took a batch to work for a Black Friday potluck, my boss and two other coworders HUGGED me! (This experience also convinced me that I need a slow cooker with a locking lid, but that's another story.) My modifications: more broth instead of water, golden hominy, black beans and southwestern corn instead of frozen corn, no chicken (vegetarian), 1 tsp of cayenne for added flavor, and a dash of lime juice just before serving. I also dump a truly ridiculous amount of shredded cheese in my own bowlful.

I grew up with this one, except we use bananas instead of celery. Both varieties remain favorite snacks of mine, as an adult! My preschool teacher also taught us how to make hot dog "dinosaurs." Ruffled potato chips or hamburger dill chip pickles make the fins on the stegosaurus' back (inserted into cuts along the side made by an adult).
