Toe's Best Salsa

Reviewed: Jul. 12, 2014
Excellent, quick, and 100% tastes fresh - even with canned tomatoes. The baseline ingredients are always on hand, witht the exception of the sorrento pepper - which i omit. My slight modifications are to use petite diced tomatoes, add 1 tsp of cumin, and coarse sea salt.

Lori's Famous Crab Cakes

Reviewed: Jun. 20, 2014
Very good. I made some modifications to achieve 10 servings. By using 4 cans of of pink crab in 6 oz. cans (very affordable), I added a 5th can of wield small shrimp to create texture. Also, I baked the 10 crab cakes at 375 for 12 minutes then broiled them until they were my desired golden color. This will be our new to-to crab cake recipe.

Fantastic! Just having it with plain grilled tofu and some veggies for dipping. Husband is loving it over grilled chicken.

Hot and Sour Chicken Soup

Reviewed: Apr. 7, 2014
I am torn between 3 or 4 stars. It's good. It cuts the craving when you want a hot and sour soup. But, I think it needs more playing to get that more intense flavor, I had to give it a 4 bc I like it enough to keep trying it. It's added to my recipe box to definitely make again and really appreciate having a nice starter recipe like this.

Easy Shake and Bake Chicken

Reviewed: Mar. 28, 2014
Good little recipes. But, I have learned that I can replace many FLOUR ingredients in recipes and replace with CORN STARCH to make this recipe (and many others) gluten-free. Similar texture, great taste, equally as easy.

White Bean Soup

Reviewed: Mar. 5, 2014
Pretty good, particularly for a quick prep soup. It's a good base and you can take it in so many directions. I took it into a bit of a spicier direction. I used homemade chicken stock, added 1 can of white hominy, 1 can of tomatoes, 1 can of white northern beans, 1 can of red kidney beans that were seasoned with cumin and lime, and added a tablespoon of the liquid from canned chipolte peppers with adobo sauce. Served it with a salad and crusty bread. Stay cozy!

Joe's Perfect 'Anti-Sour Mix' Margarita

Reviewed: Feb. 15, 2014
I wanted a lean option to explore cocktail options, I did 1800 silver, triple sec, and fresh squeezed limes in lieu of sweetened lime juice. I had orange seltzer, which was nice. Good little cocktail,

Super Easy Slow Cooker Chicken

Reviewed: Nov. 5, 2013
Having not yet tasted, this recipe was a good starter guide to get that chicken marsala-like recipe for a slow cooker. I changed a lot. I used a can of 98% fat free cream of mushroom, 1 cup of fresh white mushrooms, 1/2 cup of marsala wine, 1/4 cup of sherry (my favorite ingredient), 1/2 teaspoon of oregano, 1/4 teaspoon of pepper. I omitted any garlic, but did add 1/2 cup of sliced onions. Lastly, I used frozen, thinned chicken breasts that I thinned before freezing. This is bound to be good tonight.

Jersey Fresh Tomato Soup

Reviewed: Oct. 7, 2013
The base of this recipe is definitely on the road to perfectly delicious, but my outcome was way too salty. Perhaps due to the combination of chicken stock, celery salt, and salt, I would recommend ommitting and simply adding at the end to taste. My result will be eaten b/c it is truly a delicious soup, but overshadowed by a ridicious amount of saltiness.

Tuna Tartare

Reviewed: Oct. 6, 2013
This recipe was a good base, but I knew some things had to be adjusted to ensure a more flavorful dish. I replaced the olive oil with toasted sesame oil, added some green onions and about a teaspoon of minced garlic, and added a tablespoon of rice vinegar. The mixture chilled for at least an hour before serving. I served it with homemade corn tortilla chips, but wontons would be fantastic too. I also served it with diced avocado on the side as an optional add-on.
