Refreshing Lentil Salad

I used this as a basic recipe and played around with it a bit. Trader Joes has a great packaged lentil which is all ready to go. I added everything but also added cucumber, red pepper, kalamata olives, only half the lemon. I didn't add the lemon zest or the cilantro. I added some diced jalepeno pepper, sea salt, and curry powder. I left out the eggs as I am vegan. Super easy and yummy!

Red Lentil Curry

Really yummy. I recently am eating more vegan and this is now a great go to recipe. With the curry I only had a small shallot so when I added the curry paste mixture it was too dry. I added a half of cup of water about and then added coconut milk slowly until I got it to the smoothness I wanted. About a half a cup. A great short cut is using Trader Joe's lentils. They come precooked in a vacuumed sealed bag. I just threw the bag into boiling water for 5 minutes and voila, lentils were done. Ate over brown rice. Soooo good and filling as a great main meal!

Veggie Pot Pie

This was super yummy and had it for Christmas with cranberry sauce. I increased carrots, added corn, put in broccoli instead of cauliflower (just like it more), and it came out really good. Have to agree to put in more cornstarch to get it thick. About a tablespoon more.

Crust for Veggie Pot Pie

This was a good tasting crust but went through a few batches before I decided to add more water. It was coming out to dry and was unworkable. At least needs a tablespoon or two more.

Country Quiche

This was a fun basic recipe. I made it for Christmas breakfast and enjoyed it with my husband and I. We don't eat pork so used turkey bacon instead, I like a lot of veggies so added about half a green pepper and diced plum tomato. Really enjoyed it and will make again.
