Ricardo's Pizza Crust

When I read the recipe, I didn't think it was going to be anything special. I did mine for the entire one hour on dough cycle in the bread machine and left out the basil and oregano, baked it at 375 for 17 minutes. This crust was heavenly! Super soft and chewy. The garlic and sugar were perfect!

Playgroup Granola Bars

These are so good! I made these thinking I could save money, but I just knew they weren't going to be as good as store bought, but I was wrong, these are way better!!! I used wheat flour, 1/2 c brown sugar, 1 c raisins, 1/4 c chocolate chips and 1/2 c pecan pieces, omitted vanilla. Talk about addictive!

Oatmeal Raisin Cookies I

These were excellent! Oatmeal Raisin are my favorite cookies. I didn't have the vanilla extract, but they came out just fine to me without it.

Texas Enchilada Sauce

This sauce was really good. This was my first time making enchiladas and my children can be picky so I really wasn't sure what recipe to go with. I'm glad I went with this one, we all gobbled it up. I just cut back on the chili powder a good bit and used pureed tomatoes instead of crushed. Thanks for the recipe!

Homemade Chicken Cacciatore, Sicilian-Style

This came out really good. I put everything in the crock pot which made it really easy. I just added a little bit of olive oil to the bottom of the pot and then added my veggies, then I added a pack young chickens and drumsticks and the rest of my ingredients. I replaced the red wine with white because it's all I had, also added a can of tomato sauce and used basil and oregano diced tomatoes. Cooked 4 hours on high, one hour on low, added the flour and tomato juice mix in the last hour. My family was very pleased, will be using again!

Lemon Garlic Tilapia

This fish is delicious! I love baked fish and this is my new recipe for tilapia. I sauteed 4 garlic cloves in olive oil and put extra olive oil in my baking dish, lightly seasoned the fish with salt and pepper. Then added small amount of lemon juice, parsley and drizzled the garlic and oil. I covered it to seal in the flavor. My children even loved it and they can be picky when it comes to fish.

Easy Apple Cinnamon Muffins

These came out very good. I omitted the topping ( I know this was probably the best part!). I felted like with the topping it was too unhealthy and I was having these for breakfast. I also replaced the oil with applesauce. I only needed one medium size granny smith apple, and it was plenty for these muffins. I filled them to the top, so they came out big. I ended up with 14 muffins. Be careful, these are addictive!

Roasted Potatoes with Greens

These were good! I was looking for a recipe to use up the rest of the spinach and potatoes I had. I did like another reviewer suggested and sauteed the potatoes with the garlic in oil, then added rosemary, baked for 15 mins. covered and 15 uncovered and followed the rest of the directions. I really liked the crispiness of them and the garlic/rosemary taste. It also made my house smell really good while cooking!

Mardi Gras King Cake

This king cake is amazing! Better than most bakeries. I made some changes: for the filling I left out the nuts and raisins, I never heard of a king cake with raisins and I'm from Louisiana! And I doubled the filling. I did the dough in the bread machine which helped a lot. For the frosting I put a pinch of vanilla in the sugar, a small amount of melted butter and enough milk to make smooth. I baked at 350 for about 15 minutes. This was my first time doing a king cake and using a bread machine and found it was easier than I thought it would be. If you follow directions, you won't be disappointed with this recipe!!

Honey Chicken Stir-Fry

I doubled the sauce and the amount was perfect. I didn't have soy sauce so I used teriyaki instead and less honey. I served it over brown rice. It came out really good. Thanks for the recipe!

J.P.'s Big Daddy Biscuits

I loved these biscuits! Just like from the can but better! I followed the recipe exact, and actually had to use a little bit more milk than called for. I rolled them up in foil and let them sit overnight in the fridge. In the morning all I had to do was cut them and bake them. I made 6 jumbo biscuits and they baked perfectly. I didn't know making biscuits from scratch was so easy! But my husband thought they were just ok, he asked if they had butter, because he wanted more of a buttermilk biscuit, so next time I might melt some butter on top the dough before baking for him.

Lentil Soup

Wow! This was absolutely delicious! When I first tasted it right after being cooked I thought it was too bland, but I let it sit a few hours in the pot and when I fixed my bowl it was so tasty. I think the oregano and basil really compliments the lentils. I did make a few changes. I did 2 cups vegetable broth, 6 cups water, the consistency was perfect. I added a half a teaspoon more oregano and basil, another garlic clove and another bay leaf, I left out the spinach and vinegar. My daughter and I got seconds, I almost went back for thirds!

Nacho Cheese Sauce

Made this for my husband's broccoli and he thought it was really good. He wanted me to just use cheese whiz but I told him I wanted to try this recipe, and good thing I did, I saved money, all the ingredients I had on hand. The only reason I gave it 4 stars instead of 5 was because the directions weren't too clear to me, was I suppose to stir the whole 15 minutes?? And I had to add milk to it when reheating. So overall, not the easiest but very good taste!

Best Marinara Sauce Yet

I had to find a recipe for spaghetti sauce because I wasn't sure if Ragu and Prego were kosher, besides the fact that I love cooking from scratch. I knew this recipe was worth trying because I love cooking with white wine, and it was so good and simple too. Throw everything in the blender, saute your onion and then add everything in the pot and simmer!! I used the 1 clove of garlic to blend in with the tomatoes, but I felt like that wasn't going to be enough for me, so I saute another clove with the onions, and it came out great!!! Not going back to the jar stuff!

Yummy Lemon Salmon Burgers

I give this 4 stars because my husband wasn't crazy about them, but me and my daughter loved them. I made this exact recipe the other day, the two eggs it calls for was perfect for me, but I think I made them too thick, I made four and fried them on the stove in a little bit of oil, but they weren't cooking in the middle, so I had to put them in the oven. But today I mixed it up and dipped each patty in seasoned flour and fried them in my fryer and they came out delicious, I baked the others for me and my daughter with no flour and I thought they were great. My husband ate it on hamburger buns with mustard and ketchup, he wasn't crazy about the mayo. Thanks for the recipe, it's a keeper!

Basic Ham and Bean Soup

I made this tonight for my children. We don't eat pork so I subbed a can of new potatoes for the ham. I used 4 cups chicken broth and 2 cups water, the texture came out wonderful, I soaked them for a few hours and let them cook down for about 3 1/2 hours. I left out the salt because I thought it would have been too salty with the chicken broth, but I was wrong they were under-seasoned, I guess because I had no meat. But I used this as a base recipe for white beans. I served over rice with cornbread
