Apple Pie Muffins

Reviewed: Oct. 15, 2011
Delicious! I've now made these twice and they just disappear. Instead of chopping the apples, I like to grate them. The only other change I made was to use oil instead of butter the second time I made them- they were incredibly light!

A lovely change from the normal pancakes! I increased the amount of lemon though cos we love citrus!

Banana Pound Cake With Caramel Glaze

Really quite yummy. Didn't have shortening so had to use all butter. A nice fancied up banana bread!

Coffee Cake. Literally.

Reviewed: Jun. 13, 2011
It was alright, the cake took a lot longer than stated in the recipe to bake. I cut down on the sugar but still found it overwhelmingly sweet. I've found nicer coffee cake recipes that have used less butter, so I won't make this one again

Spice Cookies

Reviewed: Apr. 16, 2011
Quite nice, but a bit plain. I used half brown sugar and half white sugar, doubled the cinnamon, added some ground ginger and some vanilla. I thought these were best eaten within 2 days or they went a bit stale

Korean Cucumber Salad

Reviewed: Feb. 16, 2011
This is alright, but not great. The recipe should specify RICE vinegar as white vinegar is to pungent. There should also be some honey as is traditionally use in Korea. The sesame seeds don't need to be fried, just toast them in a dry pan. Replace the vegetable oil with dark sesame oil and add directly to the sauce mixture.

Orange Loaf

Reviewed: Feb. 16, 2011
A quick and economical loaf that's also delicious! I used butter instead of margarine and reduced the sugar in the cake to 1/2c. The 'glaze' is more of a syrup. I poked holes in the cake and brushed half of the syrup over. Using the full amount would have been too sweet for me. I also used an 8 x 8 pan, so the cake baked in 20 min

Thick Chocolate Pudding

Reviewed: Dec. 16, 2010
Easy to make with ingredients you usually have on hand. I made it on the stove top. I also added 1-2T of butter at the end which made it nice and shiny and smoothed out the flavour. A good base recipe which you can add different flavours to such as coffee for a mocha pudding or various alcohols like whisky, kahlua or bailey's

Colossal Cookies

Reviewed: Dec. 14, 2010
These were exceptionally easy to make and were really quite tasty. However, they were a bit too chewy for my liking, so the next time I will grind half of the oats for a finer texture. I refrigerated the dough and shaped them into 2 dessertspoon sized rounds. I didn't bother flattening them and they didn't spread much at all.

Key Lime Pie VII

Reviewed: Dec. 4, 2010
Deceptively easy and impressed all my guests! I made it with a gingersnap and coconut crust instead (1 1/2c crushed gingersnaps, 1/2c toasted flaked coconut, 4T melted butter). I used 2 cans of condensed milk and it was the perfect amount. I highly recommend this!

White Fruit Cake

Reviewed: Nov. 14, 2010
I'm not big on fruitcake but my boyfriend has been asking me to make one for ages... so glad I did! I cut down on the sugar by 3/4 of a cup because I don't like too sweet things. I think this would keep as well as traditional fruitcake but there's never enough left for me to test that! My custom version will be posted soon

Citrus Mint Cooler

Reviewed: Oct. 22, 2010
The recipe was too sweet for me, so the second time I made it, I cut the sugar down to 1c. I like my citrus tangy! So refreshing in the summer (especially with a splash or two of vodka) I can't wait to try this with lime instead of orange!

Japanese Okonomiyaki

Reviewed: Oct. 22, 2010
This is one of my favourite Japanese diner meals. I left out the (untraditional) bacon and ginger and replaced the cabbage with my favourite okonomiyaki filling kimchi. I also served with Japanese mayo. I was surprised how easy it is to make!

Boscobel Beach Ginger Cake

Loooooved this! As did everyone else so it only lasted 1 day. I cut the butter down by 1/4c as that was all I had and it was still super moist. I made a lemony sourcream glaze as well. My new favourite

Oatmeal Peanut Butter Cookies III

Very nice. I'm only giving it 4 stars because it was INCREDIBLY sweet and too rich for my tastes. I will definately make these again, but next time I'll use less butter and sugar and probably not make the filling

Grenadian Spice Cake

Reviewed: May 10, 2010
Swoon. Am eating a slice as I type. I replaced the milk with coconut milk as suggested by a couple other reviewers. This simple to make cake is one of the most delicious things I've eaten. I baked it in a medium square tin and it only took 35 min to bake. Oh, I also added 1T of lime juice. I love this cake!

Iced Tea II

Reviewed: Dec. 9, 2009
This was nice and refreshing on a hot summers day. However it was way too sweet and the amount of lemon juice overpowered the tea. I've now made it a few times (it never lasts long at my house!) and now make it with 5 teabags, boil the water with the sugar and steep it for 20-30 min then add 1/4c lemon juice. I really like it with Earl Grey tea and am going to experiment with fruit teas

Mama's Balsamic Vinaigrette

Reviewed: Nov. 25, 2009
Delicious with tomatoes. I didn't add the mustard as I thought that it would overpower the balsamic and olive oil, so it gets 4 stars from me. This recipe really should specify AGED balsamic vinegar as cheap balsamics do not have the same mellow sweetness. A good balsamic does not need any honey or sugar added
