Totally Tangy Baked French Fries

Very good! It's easy to adjust the heat level depending on what you like (we like mild heat). Excellent as lunch the next day, too! As another person did, we used Ranch dressing as a dip.

Italian Wedding Soup

Apple Turnovers

The family loves these but I'm not a huge fan of desserts that feature apples. My only suggestion is to bake these on parchment paper or a silpat.

Garbanzo Bean Chocolate Cake (Gluten Free!)

My whole family really liked this cake - and I liked that it wasn't full of fat and useless carbs! Loved the texture - less greasy and heavy than a brownie, but lighter and more fudgey than a cake. I did make a few additions, which is why I only gave it 4 stars. Being picky, I cooked dried garbanzo beans because they have a nuttier taste than the canned beans. My additions are the following: I did not add salt to the beans while they cooked, so I had to add 1/2 teaspoon of salt to the bean and egg mixture. For a richer flavor, I added 1 teaspoon of vanilla to the bean mixture and I added 1 teaspoon of espresso powder to the chocolate while it was melting.

Crunchy Caramel Corn

My range needed repairing, so I tried this recipe since it's close to the recipe I have always used. Very, very disappointed because this was not crunchy - the coating was, but the popcorn was not. I will stick with the "tried and true" for this.

Real N'awlins Muffuletta

Made the olive salad and set out of a tray of meats and cheeses for our family's "sandwich night". Loved the olive salad beyond anything reasonable...it was even good alone in a sandwich!

Sweet Dinner Rolls

I have made this dough several times and have made rolls, garlic bread sticks and cinnamon crescent rolls from it. All have been a hit! I use rapid rise (bread machine) yeast and my KitchenAid mixer...quick and easy!

Amish White Bread

I prefer my recipe that is similar to this. I found this too sweet to be a good dinner bread and the use of water instead of milk had this one lacking the flavor I prefer.

Carrot Rice

Very tasty and a nice change from other rices! I used toasted slivered almonds since I didn't have peanuts and ran my knife through them a few times so they we still large enough to taste. I also diced my onions - couldn't see having long strands of onion in a rice dish. For the kids, I omitted the cayenne.

Focaccia Bread

I used Rapid Rise yeast so I could immediately shape the bread and let it rise only 1 time. I subbed fresh garlic instead of using garlic powder and used the herbs of my choice. Very quick and easy and the family loved it!

World's Best Lasagna

I have to edit this since I have found that this is an excellent sauce for homemade pizza if you leave the meat out! Since everyone has different tastes, I increased the amount of Italian herbs and completely cut out the dried basil because I don't like it. I increased the garlic. I cooked the meat (not too brown), drained the fat and then added the meat and onions and garlic back to the pan since I don't want the onion cooking in that much fat. I like fennel, so I did not omit it as others have suggested. I make 3 layers each with 4 noodles for a thicker lasagna - I have to use more cheeses to accomodate the extra layer.

Blueberry Coffee Cake I

I rarely use my bundt pan, but this bakes well in a 9 X 13 pan as well as makes one dozen muffins. To cut back on the fat, I do not use the streusel topping. Instead I add 1/8 teaspoon of cinnamon to the flour mixture and sprinkle a little sugar over the top before baking. Depending on the pan used, times do have to be varied. Cake is done when it is golden brown.

Awesome Sausage, Apple and Cranberry Stuffing

Great start of a recipe, but only 4 stars since I change it up to suit our tastes. First, I never, ever stuff the turkey - it is only used as a dressing, so the moisture has to be adjusted. I use part corn bread (not the sweet kind) instead of all bread and then adjust the seasonings for our taste. I add more broth - this is where corn bread works better than all wheat/white bread because it doesn't "break down" like the other breads when it gets moistened. A tart apple is the only way to go, so I use a Granny Smith. Fabulous with any dried fruit you like - I've made it with cranberries, cherries, blueberries and combinations of various fruits. I prefer the flavor of a hot Italian sausage instead of a turkey sausage.

Chinese Firecrackers

All I can say is WONDERFUL! I had trouble shaping the phyllo as directed, so I simply cut a sheet into quarters the long way, put a bit of filling on one end and folded it end over end in a triangle (like folding a paper football).
