Beef Barley Vegetable Soup

I was looking for a recipe after I had the Vegetable Beef soup at Bob Evan's and really liked it (I'm not a huge beef eater). This fit the bill exactly!! So delicious. I cubed the meat, coated in some AP flour, added to a hot pan I had going with a little oil, minced garlic, some of the chopped onion and a TBSP or so of Worcestershire sauce. I browned the meat, then added it to my large (oval) crockpot with the veggies. I added 3 small-medium white potatoes (peeled, cubed) and frozen broccoli because I didn't have an entire package of frozen mixed veggies plus I love potatoes and broccoli. I used all the other ingredients as listed. I cooked on low for 10 hours without the barley. We were finishing Christmas shopping and when we came home, the house smelled so good! We enjoyed a bowl without the barley - so tasty! - then I added an entire cup of barley because of other reviewers who said it wasn't enough and then waited about another hour and had a second bowl with the barley. I have to say that I wish I would have stuck with the 1/2 cup of barley. 1 cup seemed too much as it sucked up all the yummy broth, and its only going to get thicker now. By the way this is enough to feed a small army. It's just my husband and I and we only made a small dent in it last night. I imagine it will taste even better for lunches this week. Sarah's Applesauce

I had some apples that were beyond eating out of the hand stage and I hated the idea of throwing them out...they have been in the fridge so long I don't even remember what kind they are. Also, I was craving chunky applesauce and this hit the spot! Unbelievably easy to make - I had no idea! This is so much better than jarred. I left out the sugar because the apples were on the sweet side already and I'm glad I did. It was the perfect sweetness. Thanks for the recipe!

Mexican-Style Goulash

Thank you for this recipe! I first made it a few years ago and its in our rotation for good. So delicious. I do substitute whole wheat elbow mac for the regular for more nutrients. Also tonight I added chopped zucchini because I wanted to use up some. So yummy!!

Buffalo Chicken Wing Soup

Made a half batch of the soup today. I used less than half of the milk and soup. I also sauteed chopped celery and onion before I added the other ingredients. I made this on the stovetop. I think next time I will top the soup with a spoonful of sour cream when serving or I may try leaving it out. I did not like the texture of the sour cream; it never fully incorporated into the soup. Try topping this with a bit of shredded cheddar cheese. Delish. Thanks for submitting this recipe!

Cinnamon Belgian Waffles

I was looking for a recipe last minute to make breakfast for my mom and sister who were visiting from out of town. I doubled the ingredients and it made 7 total waffles. I used 1 c all purpose flour and 1 c Bob's Red Mill Oat Bran Cereal. I did not bother separating the yolk/whites either. I also put a LOT more cinnamon than the recipe called for b/c I love cinnamon. I suggest you do too! Thanks for the recipe.

Golden Potato Soup

I just made this. I used 5 medium russet potatoes. This looked like more than 3 cups so i added more of everything else. I added dried oregano and dried thyme. I used evaporated milk (diluted to 50% with water) instead of regular milk. I added just a handful of shredded cheddar cheese instead of american and used 2 spicy chicken (casings removed) instead of ham, because thats what i had. It tastes great, I just had a spoonful. I'm refrigerating it for tomorrow's dinner and cannot wait to taste it when the flavors have had even more time to blend. BTW, this would have been 5 stars but the prep and cook times weren't given and it would have been nice to have an idea of how long this would take. It took me about an hr total. YUM!

Simple Whole Wheat Bread

This was my first attempt at making homemade whole wheat bread and I was so tickled at the results! I only had 1 packet of yeast so I made half the recipe. As suggested by another review, I sub'd sugar for honey (not enough of that either!), and 2 c bread flour, 2 c whole wheat flour, 1 tsp salt, and 3 TBSP wheat gluten. I was not sure when to add the wheat gluten. I ended up adding it w/the whole wheat flour (step 2). Baked in a glass loaf pan at 350 for 25 mins, allowed it to cool slightly in the pan and then managed to get it out and cooled completely on a cooling rack. My husband and I were both floored by the slightly sweet, chewy bread. This is a winner! I cannot wait to make a full batch so we can have 2 loaves! Thanks for this recipe!!!

Creamy Banana Bread

This is probably the best banana bread recipe I've made and I've made at least 10 different recipes (most from this site). I was so excited to be able to use the package of cream cheese I've had left from the holidays, as well as a couple overripe bananas I had (keep them in a bag in a freezer). I sub'd applesauce for half the margarine, used only 1 c of white sugar, and left out the nuts. I was scared I didn't have enough for two loaves but it worked out. After 45 mins mine was still not completely cooked, so I put it in for another 8 minutes and it was perfect. I've had just 1 slice so far but I know my husband is going to love the light texture and cinnamon and brown sugar surprise in the middle! Thanks for posting this recipe!

Healthy Turkey Loaf

I have not made meatloaf for awhile because I was not having the best luck with the recipes I was using. After making this tonight and seeing my husbands eyes light up with delight, I know I can make meatloaf again! Plus using turkey and adding the veggies and salsa makes this so healthy. I followed other suggestions and doubled everything except for the egg. Covered the top with a mix of ketchup and Worcestershire sauce, baked uncovered at 375 for approximately 50 minutes. Served with steamed fresh green beans with salt/pepper/shredded Parmesan cheese and potato wedges. So delicious! Thanks for posting this recipe!

Marinated Baked Pork Chops

I made these tonight using the suggestion of a previous reviewer: I added another TBSP brown sugar and I cooked them at 375 for 15 mins, then turned them over and put sauce on top and baked for another 15 mins, before broiling for 5 minutes. Serves with green salad and mashed garlic potatoes. Very delicious!

Actually Delicious Turkey Burgers

I made these for the 2nd time tonight and they were delicious! I had only plain breadcrumbs so I added some dried oregano and basil. Also used dried parsley as I didn't have any fresh. Also added a dash of Red Hot pepper sauce and Worcestershire sauce as others suggested. Grilled up beautifully! Thank you!

Southern Potato Salad

This was so delicious! I knew it was going to be before I refrigerated it overnight (not a big fan of warm potato salad). I only had 2 potatoes so I used 2 eggs and halved everything else. I didn't have celery so I left it out. I added a pinch of onion powder and pinch of salt and sprinkled paprika over top of it. I cannot say enough. My husband also loved it and he is really picky about potato salad! I will definitely make this again. I am sure it would be a hit at any potlucks/get togethers. Thanks for posting this recipe!
