Beef Barley Vegetable Soup
I was looking for a recipe after I had the Vegetable Beef soup at Bob Evan's and really liked it (I'm not a huge beef eater). This fit the bill exactly!! So delicious. I cubed the meat, coated in some AP flour, added to a hot pan I had going with a little oil, minced garlic, some of the chopped onion and a TBSP or so of Worcestershire sauce. I browned the meat, then added it to my large (oval) crockpot with the veggies. I added 3 small-medium white potatoes (peeled, cubed) and frozen broccoli because I didn't have an entire package of frozen mixed veggies plus I love potatoes and broccoli. I used all the other ingredients as listed. I cooked on low for 10 hours without the barley. We were finishing Christmas shopping and when we came home, the house smelled so good! We enjoyed a bowl without the barley - so tasty! - then I added an entire cup of barley because of other reviewers who said it wasn't enough and then waited about another hour and had a second bowl with the barley. I have to say that I wish I would have stuck with the 1/2 cup of barley. 1 cup seemed too much as it sucked up all the yummy broth, and its only going to get thicker now. By the way this is enough to feed a small army. It's just my husband and I and we only made a small dent in it last night. I imagine it will taste even better for lunches this week. Sarah's Applesauce
I had some apples that were beyond eating out of the hand stage and I hated the idea of throwing them out...they have been in the fridge so long I don't even remember what kind they are. Also, I was craving chunky applesauce and this hit the spot! Unbelievably easy to make - I had no idea! This is so much better than jarred. I left out the sugar because the apples were on the sweet side already and I'm glad I did. It was the perfect sweetness. Thanks for the recipe!

Cinnamon Belgian Waffles
I was looking for a recipe last minute to make breakfast for my mom and sister who were visiting from out of town. I doubled the ingredients and it made 7 total waffles. I used 1 c all purpose flour and 1 c Bob's Red Mill Oat Bran Cereal. I did not bother separating the yolk/whites either. I also put a LOT more cinnamon than the recipe called for b/c I love cinnamon. I suggest you do too! Thanks for the recipe.
