Garlic Cheddar Chicken

YUM! I added an egg to the butter to help the coating stick (just make sure the butter isn't too hot so the egg doesn't scramble!). I also baked an additional 15 minutes and turned the heat up to 400 for that period to allow the cheese to get a bit brown/crispy. This is a keeper, leftovers are great right out of the fridge! Do make sure to use plenty of non-stick spray and/or nonstick aluminum foil, they will stick quite a bit without!

Pumpkin Brownies

I made these into a dozen cupcakes, layering the two batters and swirling with a toothpick. They only needed about 25 minutes of bake time. They were very tasty! As others suggested, I cut back on the clove to 1/4 teaspoon. Next time I'd leave it out, as I didn't think it paired well with the chocolate. I also used half whole wheat flour to add a bit of whole grain. Next time I may cut down the butter to 1/2C as well.

Pumpernickel Bagels

This was my first time making bagels at home, and wow are they tasty! I did not have coffee crystals, so I used brewed coffee in place of water. I was also out of molasses and subbed maple syrup. The dough was overly sticky so I ended up added extra flour during kneading ~1.5 cups.

Grilled Fish Tacos with Chipotle-Lime Dressing

I loved both the marinade and the sauce... but not together. I followed the marinade recipe very closely only subbing white balsamic for distilled vinegar. I marinaded flounder fillets for about 12 hours and grilled using tin foil on the outdoor gas grill. AMAZING...would enjoy the fish plain served over rice as well. For the sauce, I only used 1/4 C adobo sauce and it was still very spicy and bold. When I used the sauce on the tacos, the over powered everything else and it was all I could taste - which isn't what I wanted to with good fish fillets! The next day, however, I used the sauce with leftovers (frozen fish stick tacos) and enjoyed it very much as I didn't want to taste the fish sticks as much.

Real Strawberry Frosting

I "peeled" my strawberries to remove the seeds. This reduced the gritty texture, but still left an amazing fresh strawberry flavor. I used them on jello poke cupcakes (lemon cake, strawberry gelatin) to make strawberry lemonade cupcakes. Thank you for the recipe, it is wonderful!

Thanksgiving Flavored Turkey Burgers

I used 1 lb of turkey and scaled the rest of the ingredients down accordingly. I whipped them a few hours before hand, wrapped individually in plastic wrap, and refrigerated to ensure they would hold their shape. This made 5 nice burgers. Be careful, as the stuffing can cause these burgers to burn more easily than 100% meat burgers! I topped with gouda, jelled cranberry sauce slices, & fat free cream cheese. I also used pumpernickel hamburger buns, which gave for a nice presentation. Next time I would add 1/4 cup or so of water to the stuffing, as they got a little dry without. Would make again... thanks for sharing!

Amazing Whole Wheat Pizza Crust

I had to add about half a cup of extra flour, as the sigh was pretty sticky. I used a sprinkle of corn meal in the pizza pan to ensure the dough wouldn't stick. I baked the crust for 5 minutes brushed with olive oil then added toppings abd cooked for 18 more minutes. Try drizzling a small amount of honey over the finished pizza (regardless of toppings) for a really nice compliment to the wheat flavor!

Country Apple Dumplings

I made this while my sister was in town and thought it was just ok. Very easy to make, but it could use a little help. If I make this again, I would add additional seasonings to the cinnamon/sugar (nutmeg and cardamom) & dice up additional apples to put in the bottom of the pan to create a nice apple sauce to spoon over the dumplings. I would also top with candied pecans or almonds to give a bit more texture.

Kyle's Favorite Beef Stew

This is a great recipe written as is, however I would recommend dicing the onion instead of quartering. I've tried with a few altercations such using chicken breast cut into cubes & adding parsnips and peas. It makes a WONDERFUL chicken stew. For chicken I use a chardonnay and for beef a pinot noir.

Bread Machine Pizza Dough

This recipe was great, possibly even better the next day! I used a blonde ale. The only problem I ran into was that the dough was WAY too sticky when made as written. I ended up adding another 1 1/2 C of flour and kneading by hand quit a bit after the bread maker finished. Next time I use this recipe I will try making a BBQ chicken pizza with sharp cheddar & bell peppers.

Pizza On The Grill I

This may have been one of my most epic meals. I did use bread flour instead of all purpose. I put all the dough ingredients into the bread maker on the "dough/pasta" setting. When it finished, I put the dough onto a floured counter top and divided into 4 balls. I kneaded each ball a little and formed into a thin crust. I them coated each crust with olive oil prior to grilling. No problems with sticking! Used a canned pizza sauce and deli slices of mozzarella. I would highly recommend using the slices instead of shredding cheese, it allows you to get a nice thin even amount of cheese I altered the toppings to my liking (mushroom, sausage, olives). YUMO! Make sure to go easy on the sauce, cheese, and toppings so it cooks evenly.

Tofu Turkey I

This was a good substitute for turkey on Thanksgiving. I halved the recipe (only two of us were willing to eat it). I added some soy/garlic/onion to the tofu before pressing. Also I pressed much longer than recommended (about 24 hours), then baked about about 350. Could not find any miso, so I left that out. Topping with gravy prior to serving helps the flavors a lot! I liked this a lot more than that the frozen tofurkey!

Roasted Winter Squash Seeds

YUM! I'd never thought to use the seeds from squash. I tried it with acorn squash and it was GREAT! My seeds were a bit small so they only took about 10 minutes until they started popping. Also added some garlic powder & cayenne - most any seasoning could probably be added. I will not be throwing out my squash seeds any time in the future!

Carrot Burgers

YUM! I used panko bread crumbs instead of corn flakes and added fresh garlic. Reminded me of "crabby patties" from Sponge Bob! I can see why they'd be a big hit with kids! Next time I'm going to try adding cayenne and hot sauce!

Grilled Portobello Mushrooms

I removed the gills and peeled the skin from my mushroom caps, then after marinading baked them for 20 minutes at 425. Topped with provolone cheese and served burger style with tomato and lettuce. Makes for a very tasty 'bello burger!

Gumbo Style Chicken Creole

This was my first time eating or making gumbo. Used Quorn naked chik'n filets to make this a vegetarian dish. Turned out great! Added a can of drained black eyed peas and some veggie broth, and served over rice. YUM YUM! (If you like spicy, don't be afraid to add more hot sauce!)

Pizza Dough III

I love this super quick recipe! When I have time, I let it rise for about 3 hours and stretch it into a jelly roll pan. Have also done the 30 minute rise, but I prefer to let it rise longer. The dough is a bit sticky, so I put olive oil on my hands when shaping the dough. Can easily be doctored up with garlic for Italian pizza, extra sugar and cardamom for fruit pizza, or taco seasoning for Mexican pizza. Mmmm... :) You can easily make a pizza in the time it generally takes to get delivery, at a fraction of the price!

Cerveza and Lime Marinade for Shrimp and Fish

I marinaded for an hour prior to baking some Tilapia and broiling some shrimp. The flavor didn't penetrate the meat very well and my family was a bit turned off that the fish and shrimp were green. The flavor of the marinade was ok, but I won't be making this again.

Roasted Asparagus with Balsamic Vinegar

Yum! I don't usually write reviews, but I loved this so much more than boiling - I had to write. I also added some graded Parmesan cheese a few minutes before taking it of the oven. 10 minutes was enough time. Added a little garlic powder as well. 5 Stars!
